They are called vertuts, Ossetian pies, sometimes even khachapuri. Juicy, lush, fragrant pies with cottage cheese and herbs are found in almost all cuisines of the peoples of the Caucasus. The original recipe involves baking them in a special oven, but we offer you a simpler and more democratic way to prepare such pies - in a frying pan.

Recipe for making pies with cottage cheese and herbs in a pan

Like most dishes of Caucasian cuisine, these pies are so delicious that it is difficult to believe in the ease of making them from such a simple set of products. Everything you need is sure to be found in the kitchen of any housewife:

  • 800 g flour;
  • 10 g dry yeast;
  • 1.5 glass of water;
  • 350 g of cottage cheese;
  • 1 egg;
  • parsley and dill;
  • green onions;
  • salt to taste;

    From a simple and affordable set of products, you can easily prepare delicious, aromatic pies

  1. Take a deep bowl, pour yeast into it, 1 pinch of salt, pour in 1 tbsp. l. oils. Stir until smooth, gradually adding warmed water and flour. The resulting dough should be thicker than the usual unpaired yeast dough, but softer than the one cooked on dumplings and pasties.

    Give the dough about an hour to rise.

  2. Cover the bowl with the dough with a towel and send it to a warm place for 1 hour. While the dough is rising, prepare the filling. Chop all fresh herbs finely.

    Greens can be cut and not very finely - whichever you prefer

  3. Salt cottage cheese, add an egg to it, put herbs. Mix everything thoroughly with a fork so that the filling becomes soft, light and homogeneous.

  4. In an hour, the dough should rise and become 2 times larger in volume. You can start to fry the pies. Tear off a small piece from the dough, carefully spread it with your fingers into a cake, put the filling in the center. Glue the cake together in a bag.

    Use more filling, but so that it does not fall out of the dough.

  5. Form a pie out of the resulting bag and flatten it a little over the surface with your hands so that the filling is evenly distributed inside the dough.

    Flatten the pies so that they are about 1 centimeter thick

  6. Heat vegetable oil in a skillet over medium heat. When the butter starts to boil, put the pies in it. Do this so that they do not touch each other, otherwise it will be difficult to turn them over.

How can you diversify the pies

Of course, every housewife can add something of her own to the pies. So you can get a new dish every time with its own flavor. For example, sometimes I fry these spinach pies. True, children do not really like this, and no talking about the benefits of this product helps. So you have to add quite a bit of spinach to more of the rest of the greens. If you like the sour taste, you can knead the cottage cheese with sorrel. This is especially good in winter, when you have to go to the store for fresh herbs, but you will probably find harvested (canned or frozen) sorrel. And I also like to add grated hard cheese to the filling, in a ratio of 1: 1 to cottage cheese. The cheese melts when frying, becomes stringy (especially children love it) and gives the pies their spicy taste.
