  2. Day 2. Sourdough needs additional feeding. Add 100 g of flour and pour in enough water until the consistency returns to the previous one. Cover the workpiece again and return it to the same warm place for a day. Remember to stir and watch the bubbles.
  3. Day 3. Now you can see with the naked eye that the leaven is working. It increased in size and was covered with bubbles. Feed it one last time (as in the last paragraph) and place it in the warmth again. Look from time to time: you need not to miss the moment when the leaven will grow 2 times from the previous volume. At this point, the mass must be halved. One part can be used immediately - to prepare dough for bread on it. Place the other half in a jar, cover with a lid with holes and refrigerate. When needed, take half of it, feed it again and put it in a warm place.
