Sauerkraut is a unique product that is good both as an independent snack and as an addition to various dishes. Due to the availability of ingredients, ease of preparation, excellent taste and useful properties, the preparation of a juicy vegetable finds a place on the pantry shelves of most Slavic hostesses. Today I want to introduce you to several interesting ways to pickle cabbage for the winter.

After moving abroad, sauerkraut became a real treasure for me. None of the people around me understood what I was talking about, and in the stores I managed to find only a product that vaguely resembled our preparation - German cabbage marinated with white wine. Despite some similarity of the blanks, the overseas version could not replace my own taste. Therefore, I had to revise my schedule and set aside a little time to cook such cabbage with my own hands.
Sauerkraut for the winter with honey
A simple recipe that does not require special culinary knowledge and time consuming.
Ingredients:
- 1 forks of white cabbage;
- 2-3 carrots;
- 2 tbsp. l. salt;
- 2 tbsp. l. honey;
- water.
Preparation:

Cut the cabbage into several pieces. Peel the carrots.
Cut the cabbage into pieces that are comfortable to hold while cutting the vegetable
- Chop the cabbage into thin strips.
- Grate the carrots on a coarse grater.

Mix vegetables.
Vegetables can be mixed directly on the table or in a large container

Tamp vegetables tightly into a glass container.
Any size glass jars can be used for salting cabbage.

Pierce the vegetables with the back of a wooden spoon to the very bottom.
Use the back of a wooden spoon or a clean wooden stick to create a hole in the cabbage

Pour salt into the hole.
Pour salt gently directly into the hole

Pour in natural honey. If the honey is frozen, pre-melt it until it is liquid.
To prepare a blank, honey is needed in a liquid state
- Bring 1–1.5 liters of water to a boil, cool for 10 minutes. The water temperature for filling should be no more than 90 degrees.

Pour hot water into a jar of vegetable mass, filling it up to the neck.
The water should reach the shoulders of the jar and completely cover the vegetables
- Close the jar with a nylon lid, place on a plate and leave at a temperature of at least 20 degrees for 24 hours.
- After a day, open the can and make several punctures in the cabbage. As a result of such actions, gases formed during the fermentation process will escape from the workpiece, and the brine will sink into the lower part of the container.
- Close the jar and leave for 2-3 days.

Place the finished cabbage in the refrigerator or cellar for storage.
Store honey cabbage no higher than 10 degrees

Georgian cabbage for the winter with beets
A great option for fans of spicy food. Cabbage turns out to be bright, aromatic and spicy in taste.
Ingredients:
- 3 kg of white cabbage;
- 1.5 kg of beets;
- 3 pods of red hot pepper;
- 2 heads of garlic;
- 2 bunches of fresh celery
- 3 tbsp. l. salt;
- 2 liters of water.
Preparation:

Choose small cabbages and beets that are bright, tasty and juicy.
The brighter the beets, the richer the color of the snack will turn out.

Bring water to a boil, add salt, stir thoroughly. Cool the brine.
There should be no salt crystals in the finished brine

Cut the cabbage heads into 6-8 pieces.
The larger the head of cabbage, the more parts it needs to be cut

Cut the beets into thin slices.
Beets can be cut with a knife or grated on a special grater for slices

Cut the garlic cloves into 2-3 pieces. Cut the peppers into rings.
The amount of garlic and pepper in the dish can be adjusted to taste

Place the ingredients in a large container: a layer of beets, cabbage, beets, garlic, pepper, celery sprigs. Repeat until the pot is full.
Vegetables can be salted in a large saucepan or in glass jars
- Fill the workpiece with cold brine, cover and leave for 3 days.

Try pickle. If the preparation does not seem salty enough for you, add a little more salt and stir the liquid on top slightly, without stirring the vegetables. Leave the cabbage for another 1-2 days.
To salt the cabbage well, taste the brine and add salt if necessary
- Spread the snack in jars, cover with nylon lids and store in the refrigerator.

Before serving, cut the cabbage into smaller pieces and top with vegetable oil.
The finished snack can be seasoned with sunflower or olive oil

Cabbage for the winter with fruits and berries
One has only to look at the photo of the next dish, as the appetite immediately wakes up and there is a great desire to try at least a couple of spoons of this culinary masterpiece.
Ingredients:
- 1 medium head of cabbage;
- 2 carrots;
- 2 apples;
- 125 g of grapes;
- 125 g cranberries;
- 5 tsp coarse salt.
Preparation:

Prepare food.
Carrots, apples and berries will make the cabbage delicious and very beautiful.
- Prepare a container for salting.

Check for coarse salt.
It is recommended to use coarse salt for pickling cabbage.

Grate the carrots on a grater with large holes.
Carrots are grated or cut into very thin strips

Chop the cabbage finely.
Chop cabbage with a shredder or a very sharp knife

Disassemble the remaining pieces into smaller pieces.
Pieces of cabbage are useful for the first layer of the harvest

Place the slices on the bottom of the container.
Spread the cabbage so that it covers the bottom of the pot

Sprinkle the cabbage with salt and place the carrots on top.
Vegetables are blended right on the kitchen counter

Grind vegetables with salt with your hands until juiced.
Grind vegetables until they start to release liquid

Transfer 1/2 of the vegetables to a saucepan, place the apples and berries, cut into wedges.
Depending on size, cut apples into halves, quarters or smaller pieces

The last layer is the second part of the cabbage with carrots.
The top layer of vegetables should completely cover the apples and berries.
- Place the workpiece under the oppression and leave for 3-4 days. Pierce the pickles periodically with a wooden skewer to release the gas.

Store kale in the refrigerator and serve as a snack or addition to main meals.
Cabbage with fruits and berries looks incredibly appetizing and has a very rich taste.
