Today on my and your table - VARENIKI !!! Dumplings with cottage cheese are delicious, satisfying and incredibly homemade. So why put it on the back burner, I immediately give a dough recipe for dumplings. By the way, at the end of the article there is a music video "how I made dumplings with cottage cheese", just don't laugh !!! ? Some interesting facts about dumplings and another funny anecdote, also at the end!

Ingredients

- 400 grams of warm kefir, - 3 eggs, - 40 grams of melted butter, - salt - 1 teaspoon with a small slide, - sugar - 2-3 teaspoons with a slide, - soda - ½ teaspoon, - flour - how much dough will take.

- for the filling, cottage cheese - about 1 kg.

- sugar for the filling - according to your taste.

I don't give the exact amount of flour, because kefir is of different thicknesses depending on the% fat content, eggs are of different sizes. ? As a result, it is simply not possible to guess exactly how much flour will take.

Moreover, "the taste and color …", everyone likes a different dough, more abruptly or softer you will adjust for yourself. But I do not advise making the dough too tight, after all, we do not roll the noodles.

The dough according to this recipe turns out to be very soft and tender, again, if you do not overdo it with flour: as soon as it ceases to stick to your hands and does not stick to the rolling pin when rolling, then that's enough. This dough can be used to make dumplings with any filling.

And now, together with you, we will make dumplings with cottage cheese!

Step 1. We heat the kefir to keep it warm. Do not heat too much, otherwise it will begin to curl up.

Step 2. Melt the butter over low heat.

Step 3. We combine kefir, eggs, melted butter, salt, sugar, soda and mix everything well.

Do not forget to prepare cottage cheese for the filling. In this case, I made it from store-bought cottage cheese, but it tastes different from what aunts sell in the market from their cows, homemade. Usually I do it with this fatty and tasty one. It's just delicious to eat with sugar, you can't eat much of the store.

So, we mix cottage cheese with sugar. Sugar at your discretion, if you want sweeter put more. You can also add a raw egg to the curd.

Step 4. Add flour.

Step 5. Knead the dough.

Step 6. We roll out the layer in the form of a large pancake.

Step 7. In the rolled layer, gently squeeze out round blanks with a glass. Pre-grease the edges of the glass with flour so that the dough does not stick.

Step 8. Put cottage cheese with a small spoon on each circle. I understand your desire to put more cottage cheese, it will be tastier (the same itself). But do not forget that the edges should stick well to each other, so that later when cooking, the curd does not end up in the pan, so be reasonable.

Step 9. We fold our circle in half, it turns out a semicircle, the cottage cheese is in the middle. We connect the edges and fasten them together with rather strong pressure along the entire semicircle. Then roll the entire flat area of the bonded dough into a pigtail.

This is done simply: start from the end and, as it were, folding the edge of the dough in half, press it with the outside of your thumb at an angle of 45 ˚. Move in a circle to the other end. So my grandmother taught me how to “braid” a pigtail on dumplings, when I was 6 years old. At first I practiced on plasticine, and then she entrusted me with the dough. And the most pleasant final stage:

We throw the finished dumplings with cottage cheese into boiling salted water, cook for 5 minutes after surfacing, take out with a slotted spoon on a plate, grease with butter and sprinkle with sugar. They can also be served with sour cream or jam, for example strawberry, like pancakes on kefir from my last article, or pancakes according to an old Russian recipe.

It turned out delicious dumplings, the recipe is very simple and affordable. By the way, in the recipe for dumplings, as in the pastry for pies, I used premium flour.

The dumplings that you see on the plate and a few more behind the scenes were made from half the dough and 2.5 store packs of cottage cheese (180 grams each)

Place the remaining dumplings on a tray and put them in the freezer. Once they are frozen, put them in a plastic bag and tie them to prevent the dough from absorbing odors from other foods stored in the freezer. You need to cook frozen dumplings with cottage cheese for at least 10 minutes, otherwise you risk it, there is half-baked dough.

If you have unused dough left, you can also put it in the freezer and take it out at the right time. Only it is no longer the same as freshly prepared.
