A great way to use the boiled potatoes left over after lunch is to make tortillas from them for dinner.

You will need:

  • 10 boiled potatoes;
  • 200 g flour;
  • 1 bunch of greens - dill, parsley and green onions;
  • 3 tbsp. l. vegetable oil;
  • 1 tbsp. l. salt;
  • 1 tsp ground black pepper.

You can take more greens, but do not overdo it: if there is too much of it, the dough will not be able to hold

  1. Place the potatoes in a bowl and mash them properly using a potato grinder.

    Knead the potatoes thoroughly until smooth

  2. Chop the greens very finely, put them in a bowl with potatoes, add oil and season with pepper and salt.

  3. Pour in flour, knead the dough so that no lumps remain. To do this, the flour must be added gradually, sifting through a fine sieve.

  4. Pinch off small pieces of dough and roll them into thin pancakes the size of a pan. The thickness of each should be no more than 0.5 cm.

  5. Fry the pancakes in turn in a skillet for about 1.5-2 minutes on each side. They should take on a golden hue.

This lean version of the flatbread will also appeal to vegetarians. You can add eggs to the dough for a better hold. And cottage cheese or cheese will add spice to the taste. They can be applied in two ways:

  1. As a filling. Mix well-mashed cottage cheese or grated cheese with herbs and seasonings. Roll out the potato dough, put the filling in half, cover with the other half, pinch the edges. Fry on both sides.

  2. As an addition to the dough. Simply stir in the curd or cheese into the dough and cook as usual. A little trick: in this case, the ratio of potatoes to cottage cheese or cheese should be 3: 1, respectively.

    Also cheese or cottage cheese can be mixed directly into the dough.

Once I was advised to use not boiled potatoes for tortillas, but baked in the oven. I cut it in half, take out the middle with a spoon and carefully wrinkle it with a fork. I really like this method more, however, I still cannot understand what exactly: either the taste is different, or the consistency of the dough turns out better. And in the remaining "boats" you can put any filling and bake.

By the way, my friend uses dry mashed potatoes from the store for tortillas. Yes, there is less trouble with it, and you can choose any taste. But I didn't like it very much: the dough turned out to be somehow slippery, brittle and for some reason quickly burned.
