Champignons are one of the most common mushrooms in stores. They are easy to grow, have excellent taste and nutritional properties, and are relatively inexpensive. There is an opinion that mushrooms can be eaten even raw - they are absolutely safe. Is it so? We'll find out now.
Why and can you eat raw mushrooms
During heat treatment, any products lose some of their beneficial properties. Many vitamins and compounds are not heat-resistant, and therefore are destroyed by high temperatures. Of course, food does not become completely "empty" and useless, but the level of its saturation with vitamins is significantly reduced. But if you eat foods raw, then you can get more benefits from them.
This all works well with fruits and vegetables, but what about mushrooms? Can they and should be eaten raw too?
There are many useful substances in champignons that are destroyed or reduce their concentration during heat treatment:
- B vitamins;
- group D vitamins;
- potassium;
- calcium;
- magnesium;
- phosphorus;
- zinc;
- selenium.
It turns out that eating mushrooms raw is more useful.
In addition, these mushrooms are usually grown in greenhouses. As a rule, such mushrooms are presented in stores - grown in clean conditions. They can be eaten raw, which the Italians and French are actively doing. At the same time, the risk of infection with any diseases is practically zero - mushrooms do not absorb any harmful substances from clean greenhouse soil, and therefore are no more dangerous than raw vegetables and fruits.
But "wild" champignons (they are harvested in autumn and spring and are usually supplied to markets) are best eaten only after frying or roasting. Mushrooms are good at absorbing harmful substances from the soil. Therefore, champignons that grew "savages" in ecologically unfavorable areas contain many dangerous compounds that can be destroyed by heat treatment.
Wild mushrooms can be hazardous to health if grown in a contaminated area
Champignons are best bought only in supermarkets. Large stores work with suppliers who have the necessary safety certificates and meet sanitary standards. But market mushrooms or champignons from the "household" can be harmful and hazardous to health even after heat treatment.
However, not all people will benefit from mushrooms. Nutritionists and pediatricians recommend not using mushrooms for children under 12 years old. The fact is that this mushroom (even raw, even fried) contains chitin, which the child's body simply cannot assimilate. This can lead to gastrointestinal problems. You should not use champignons and people suffering from gastritis and stomach ulcers or duodenal ulcers. Mushrooms are difficult to digest food. And this applies to both raw and cooked mushrooms.
How to process raw champignons before meals
The absence of heat treatment does not mean that there is no processing at all - the champignons just bought in the store must be prepared before serving:
- Cut off the dry end of the leg.
- Peel off the top layer of skin on the cap. It is edible, but slightly bitter when raw, so it's best to get rid of it.
- Rinse the mushrooms thoroughly under warm running water.
Raw mushrooms are healthy and safe. Their use will not harm, but, on the contrary, will be beneficial. The main thing is to give up the "wild" mushrooms in favor of clean greenhouses.
