Features of cooking various mushrooms
All mushrooms are classified as edible and conventionally edible. The first category includes:
- white;

The situation with porcini mushrooms is not so simple. Yes, the royal mushroom is famous among mushroom pickers for the fact that it can be eaten almost raw. However, it all depends on where the whites grew up. If you find them near the highway, then you need to cook the mushrooms for 20 minutes.
Boiling is a guarantee that most of the harmful substances from porcini mushrooms will pass into the broth
Honey mushrooms should be cooked for no more than 20 minutes. Longer cooking will destroy the structure of the mushrooms.
It is best to boil honey mushrooms in an enamel pan
It is enough to cook butter for 15 minutes. During this time, the toxins from the mushrooms will pass into the water.
If the butter is large, then you can increase the cooking time to 25 minutes
Boletus and aspen mushrooms require extensive thermal exposure. For the first, you need to cook for 50 minutes, and for the second, at least half an hour.
It is not recommended to collect too old specimens of aspen and brown mushrooms, since they are not as tasty and aromatic, and moreover, they may contain more toxins than young mushrooms.
The mushrooms should cook for only 5-7 minutes. The need for short-term processing is explained by the fact that the pulp of the saffron milk caps is quickly deformed.
Gingerbread mushrooms are excellent mushrooms that shrink slightly when cooked (compared to other mushrooms) and are rarely wormy
Chanterelles are often used without preliminary cooking, sparing their aesthetic appearance. However, it is still better to heat these mushrooms for 20–25 minutes, since growing in ecologically unfavorable areas they are able to accumulate toxins.

My father, who is a passionate mushroom picker, taught me how to cook mushrooms before frying. From childhood I learned that some “forest delicacies” take longer to cook, some less, but in any case, such heat treatment is mandatory for them. The fungus may look completely harmless, but no one knows exactly what toxins it contains. Before cooking, I do not cook only oyster mushrooms and mushrooms, because they are grown on artificial substrates and do not extract harmful substances from the soil.
