Summer is about to come, and on hot days you want to forget about hearty soups, borscht and main courses. Fresh vegetables and herbs are what we need. Today we will talk about how to cook okroshka with kefir. This light, low-calorie meal has several options, all of which are easy to prepare.

With mineral water
This recipe is quite simple precisely because mineral water does not give a specific flavor. For such okroshka you will need:
- 4 potatoes;
- 3 cucumbers;
- 5 radishes;
- 500 ml of kefir;
- 400 g chicken breast;
- 4 chicken eggs;
- 200 ml sour cream;
- 600 ml of mineral sparkling water;
- salt to taste;
- greens (onion, parsley, dill) - to taste.
Products you need for okroshka
- Boil the potatoes in their uniforms, cool and peel. Cut into small cubes.
- Put the chicken breast fillet in a saucepan, cover with cold water, put on gas. Bring to a boil, then remove the foam, reduce heat and cook for about an hour until tender. Get the meat out. Refrigerate and chop finely. The broth can be used for any soup.
- Wash the cucumbers, you can peel them if you like. Cut into small cubes. Boil the eggs for 10 minutes, then cool, peel and cut in the same way.
- Radishes can be chopped as you like, or grated. It's the same with greens: you can chop it very finely or cut it into large feathers and leaves.
- Put all the ingredients in a saucepan, add kefir and mineral water. Mix thoroughly, add herbs and sour cream.
Sparkling water gives okroshka a sourness. You can decide for yourself how thick your okroshka should be by adding more or less water
On homemade kvass
Since ancient times, kvass has been used not only as a refreshing drink, but also as a basis for making okroshka. It is not only tasty, but also has beneficial properties, improving metabolism, regulating the activity of the gastrointestinal tract and the cardiovascular system. In hot summer kvass okroshka will be simply irreplaceable.
First of all, we need to make bread kvass. Of course, you can buy it in the store, but this is not at all the same. Therefore, be patient (it will take 2 days to make kvass). You will need:
- rye bread - 350 g;
- water - 3 l;
- granulated sugar - 4 tablespoons;
- dry yeast - 7 g.
Slice rye bread and dry in the oven. Boil water, pour it into a 3-liter jar, put crackers in it. Refrigerate to 30-35 degrees.
Make bread kvass for okroshka yourself
Dissolve dry yeast with sugar in a little warm (not hot) water. If you prepare kvass specifically for okroshka, then four tablespoons of sugar will be enough. Yeast can be taken and "live", they will need 20 grams. Let the yeast "revive" a little and send it to a jar with water and rye bread crumbs. Cover the jar with a lid so that the gas formed during fermentation can escape. Place in a warm place for two days.
When the kvass is ready, strain it and leave in a cool place. From this amount of products, you get 2.5 liters of kvass.
Now let's start cooking okroshka. You will need:
- beef brisket - 500 g;
- potatoes - 4 pcs;
- chicken egg - 4 pcs;
- cucumber - 4 pcs;
- kefir - 500 ml;
- bread kvass - 1.5 ml;
- salt to taste;
- fresh herbs to taste.
Boil the beef, potatoes and eggs. Finely chop all products, put them in a saucepan, fill with kefir, salt and mix. Now add kvass. Okroshka is ready! If desired, you can season it with mustard, pepper, or other spices.
On whey
Milk whey, due to its sourness, is in no way inferior to kvass in benefits, and will refresh in hot weather no less. And the peculiar taste of the whey gives the okroshka a spice. You will need the following products:
- boiled sausage - 500 g;
- potatoes - 500 g;
- cucumber - 400 g;
- chicken egg - 5 pcs;
- kefir - 500 ml;
- onions - 200 g;
- citric acid - 3 g;
- milk whey - 2000 ml;
- salt to taste;
- dill to taste.
Peel the sausage and boiled potatoes, chop finely. Do the same with cucumbers and hard-boiled eggs. Put all the products in a saucepan, add dill and onions, citric acid, salt, fill with kefir and mix thoroughly. Gradually pour in the whey, stir and leave in the refrigerator for 1-2 hours.
Whey gives okroshka a spicy taste
Okroshka is good because its taste is not reduced at all by replacing ingredients or their quantity. We offer you some secrets.
- Try adding not boiled but fried potatoes to okroshka. It doesn't even need to be sliced if you sliced it thinly before frying.
- Not only boiled meat and boiled sausage can be used. Okroshka with smoked meats will surely please your family and friends even more than other options. Add smoked sausage or ham.
- Moreover, you can make a lean version of okroshka by replacing meat or sausage with fish. This can be, for example, sardine in oil or its own juice.
- Greens are the main ingredient in okroshka. You can use any greens you like, but chives and dill are a must, and the more the better.
On tan and on broth
If you like okroshka on kefir with whey, be sure to try using a fermented milk drink - tan. It will add even more acidity to the dish, and this is just what you need to cool off on a hot day.
Take the same foods as in the last recipe, except for citric acid, and add red radish and mustard to them. Instead of whey - 900 ml of tan.
Cut the potatoes and meat into small cubes. Peel hard-boiled eggs. Chop the protein and crush the yolks with 1 tablespoon of mustard.
Also cut cucumbers, radishes, chop greens. Put all the ingredients in a saucepan, stir, season with kefir. Salt.
It is advisable to add tan not to the pan, but directly to the plates with the okroshka preparation. But since this dish is light and tasty, it is unlikely that it will have time to stand in the refrigerator, so feel free to add tan when cooking if your relatives literally sweep okroshka off the table.
Any lean meat is suitable for okroshka
Remember when we cooked beef and put the broth aside? Now it will be useful to us for okroshka. This dish is original and unusual. Instead of beef, you can use any other meat, the main thing is lean.
This okroshka has a little secret. Potatoes are not boiled for her "in uniforms." Peel a few raw potatoes, chop and cook in the broth while cooking the meat.
You will need:
- potatoes - 5 pcs;
- water - 2.5 l;
- turkey thigh or beef for broth - 300 g;
- salt to taste;
- semi-smoked sausage - 200 g;
- chicken egg - 5 pcs.;
- cucumber - 280 g;
- green onions - 60 g;
- parsley - 0.5 g;
- citric acid - 0.5 tsp;
- kefir - 400 g.
While the broth is preparing, in which the chopped potatoes are boiled, finely chop the rest of the products and combine them in a deep bowl. Stir, salt, set aside.
Cool the cooked broth, meat and potatoes, cut the food in the same way and send it to the rest. Stir, season with kefir, pour in broth. Serve 1-2 hours after cooking, when okroshka is infused in the refrigerator.
