Pancakes can be different: large or small, thin or thick. The pinnacle of the hostess's skill is considered to be thin openwork pancakes "in a hole". They are also called lace. To achieve this effect, you need to add highly carbonated mineral water to the dough.

Such pancakes are delicate because of the gas bubbles in the mineral water. Therefore, the more carbonated the drink is, the better.

For openwork pancakes you will need:

  • 2 glasses of highly carbonated mineral water;
  • 1 glass of fresh milk;
  • 2 cups of flour;
  • 3 eggs;
  • 1.5 tbsp. l. Sahara;
  • 1 tsp salt;
  • 2 tbsp. l. vegetable oil (refined).

    For openwork pancakes, you need a very simple set of products.

I recommend that you pour the sunflower oil directly into the dough after it has been kneaded. Thanks to this, you do not have to grease the pan while frying, and the pancakes will not be greasy at all. You only need a little oil for the very first pancake. By the way, about mineral water: try replacing it with sweet soda, experiment with your favorite flavors. Pancakes with the flavor of cola and tarragon have especially taken root in my family. In this case, you can not add sugar.

Let's start cooking.

  1. In a deep bowl, mix alternately milk, 1 glass of soda, eggs, sugar, salt. Whisk well with a fork or whisk.

    It is better to beat the pancake dough with a whisk or fork.

  2. Gradually add the sifted flour to the mixture, stirring constantly so that no lumps form.

    Pour vegetable oil into the dough so you don't have to grease the pan while frying

  4. Gently pour the dough into the pan, keeping it suspended and shaking slightly so that the mass is evenly distributed over the surface. The pancakes should be thin, so you need to take a little dough. Fry on both sides for 1.5-2 minutes.

Openwork pancakes on mineral water are good on their own, but they will become even tastier if you eat them with berry jam, condensed milk, sour cream. You can also wrap curd, meat or vegetable filling in them.
