Hello dear friends!
I am glad to welcome you on the pages of our blog on these special Maslenitsa days! Today is Wednesday and following the Maslenitsa calendar, the third day of Maslenitsa week, on Wednesday the mother-in-law invites her son-in-law to pancakes. It's not evening yet and, perhaps, it is worth hinting to mom about this old Russian tradition, quickly get together and show up with the whole family for pancakes! Of course, she will be glad and will feed her son-in-law with pancakes with great pleasure. ?
So I started writing my article yesterday, but today is Thursday! And I can safely report that they went to my mother for pancakes and ate to the full! The evening was a success !!!
Pancake is the main symbol of Shrovetide, round, ruddy, it personifies the sun, and the sun is fertility and renewal. It was believed that the more pancakes were baked and eaten, the faster spring would come, and summer and autumn would be warmer.
And therefore, I do not want to delay and I just offer you a recipe for Guryevsky pancakes. On our site there is already a recipe for pancakes brewed on kefir, in my opinion, delicious and tender pancakes. I am not the only one who appreciated them, so I highly recommend trying.
Ingredients
Pancakes Guryevsky are also baked on kefir, but not brewed. The pancake recipe is simply delicious! Below I give pancakes a recipe with photos and videos. For cooking we need:
- wheat flour - 2 cups,
- eggs - 5 pcs.,
- butter - two tablespoons,
- kefir - 2.5 cups (sour milk can be used instead of kefir),
- sugar and salt - to taste, but I recommend putting at least 2-3 tablespoons of sugar, otherwise they will be sour.
Note from myself
Using this recipe, I get a rather thick dough, so I add plain water, about a glass. (this is not in the photo and video)
These pancakes have a slightly cheesy taste due to the large number of eggs.
Pancake recipe (with photo)
Step 1. Separate the yolks from the proteins, mix with sugar and salt and beat well. Beat better with a blender or mixer.
Step 2. Pour kefir, melted butter into the yolks and add flour. Beat well again.
Step 3. Beat the whites separately and combine with the main dough. Beat everything well again.
Step 4. Bake as usual in a preheated frying pan, slightly greased with vegetable oil or lard. Bake on both sides.
These are how they turned out - festive, early ripening Guryev's. Making such a pancake recipe is simple and quick, which is why they are called early ripening. For serving, you can decorate them with fresh berries and honey, as I did, or sour cream and jam.
A little about Shrovetide
It's so good that the custom of celebrating Maslenitsa, seeing off the winter and welcoming spring has been preserved in Russia. Of course, now the celebrations are not as widespread as they used to be in Russia. In the past, these were real folk festivals, with booths and jesters, feasts and sleigh rides, and of course pancakes. At the fair, everyone wanted his pancake recipe to be appreciated.
Now it is rather a tribute to tradition, to bake these round cakes in the last week before Lent. By the way, on the last day of Shrovetide, Sunday, pancakes are no longer baked. This day is called "Forgiveness Sunday." Before the fasting in Great Lent, before its strict days, they cleansed the soul, blamed themselves, asked for forgiveness first from their relatives, then from friends, from all honest people, and most importantly, they forgave themselves, with these words: “I forgive all sinners, forgive me, a sinner !"
As I said, Shrovetide consists of seven days and each day has a special meaning and content.
Monday - "meeting" - the counter songs were sung, the obligatory attribute of which was a straw scarecrow, booths for walks and ice slides were built. In a word, preparations were made for the celebration.
Tuesday - "flirting" - the celebration unfolded. Girls and boys invited each other to skate and eat pancakes. On this day we went sledding, skating, and horseback riding. And of course, a lot of pancakes were baked and eaten.
Wednesday - "gourmet" - mother-in-law invited their sons-in-law to pancakes. This day was distinguished by a special variety of pancakes, each mother-in-law wanted to distinguish herself with her skills and feed her son-in-law to the bone with her delicious pancakes.
Thursday - "break, razul", it was also called "wide Thursday". On this day, they danced in round dances, danced, sang ditties, conducted fistfights, and the newlyweds were lowered in a sleigh from the mountain and forced to kiss in front of everyone. The festivities went on from morning to evening.
Friday - "mother-in-law's evening" - on this day the sons-in-law treated the mother-in-law with their pancakes. Whether they themselves baked or not, it is not known for certain.
Saturday - “sister-in-law's gatherings”. On this day, the young daughter-in-law invited her relatives to visit and called her girlfriends-girls. She always presented her sister-in-law with gifts and, under the pretext of Maslenitsa, invited them to gossip about different things. On the sixth day, a straw effigy of Shrovetide was burned with the arrival of evening.
Sunday - "farewell". This day is better known to us as "Forgiveness Sunday". On this day, the godfathers went to visit each other and presented them with gifts. Everyone asked for forgiveness from each other, even if they considered themselves innocent.
This is such a Maslenitsa!
