Bazlama is a lean yeast cake very popular in Turkish cuisine. Turks substitute baslama for bread, they eat it with the first and second courses, and they love to serve it with tea with butter. Making these cakes is easy, and over time, when the "hands get used to it" - also very quickly.

You will need a minimum of products:

  • 3.5 cups flour;
  • 1 tsp dry fast-acting yeast;
  • 1/2 tbsp. l. salt;
  • 1/2 tsp Sahara;
  • 2 glasses of warm water.
  1. Sift flour with salt, add sugar, dry yeast. Mix everything and knead the dough, gradually pouring in water in portions.

    Remember to sift the flour thoroughly before kneading the dough.

  2. While you knead the dough, brush your hands with vegetable oil so that it does not stick to your palms.

    Knead the dough until soft and firm.

  3. Place the dough in a bowl, cover with a towel and leave in a warm place until it doubles in size. This will take about 1-1.5 hours.
  4. Form an elongated sausage from the dough and cut into 5 pieces. Roll them into balls and leave for another 10 minutes to fit.

  5. Roll out round pancakes about 0.5 cm thick from the balls. Make punctures on them with a fork over the entire surface. Cover the cakes with damp towels and let sit for another 10 minutes.

  6. Preheat a heavy-bottomed skillet and fry the flatbreads without oil for 2-3 minutes on both sides over medium heat.

There is an alternative to yeast baslam. I often use it, because sometimes I want to replace the yeast dough with something lighter. I cook baslama with kefir. In this case, yeast and sugar are not needed at all, and kefir will need about 1 cup, depending on its fat content and density. Add it until the dough is thick but soft. And you can also add any filling to your taste to baslam, or add seasonings to the dough.
