During Great Lent, we try to limit ourselves to food, as required by Orthodox traditions. Many are frightened by the fact that you should not eat animal products, which include milk and eggs. They are the main ingredients in most desserts and baked goods. But it turns out that lean cuisine is very rich in a wide variety of dishes, and pastries are no exception. Here are some simple dishes that will diversify your table during Lent.

The recipe for lean pie with prunes and apples in the oven
Everything is perfect in this cake: sweet chocolate taste, lightness, a combination of apples, prunes and nuts. To prepare it you will need:
- 160 grams of flour;
- 60 grams of any flakes (rye, oat or 4 cereals);
- 2 tablespoons of cocoa;
- 1 teaspoon baking powder
- a pinch of salt;
- 40 ml of vegetable oil;
- 60 ml boiling water;
- 300 grams of apples;
- 50 grams of prunes;
- 2 tablespoons of peanut petals
- 4 tablespoons of sugar;

2 tablespoons of honey.

If you don't have fresh apples, I advise you to use a dryer. I often do this, because during Lent there are no more apples left from my garden, and the store ones are either too expensive or simply reluctant to go after them. I thoroughly rinse the dryer in running cold water, then pour boiling water over it and leave it until the water cools down. It is important to add the soaked apples to the filling while they are still damp: this will bake them in the oven rather than dry out again.

Take a deep bowl, sift flour into it, salt, add flakes, cocoa and baking powder, honey and butter. Mix everything thoroughly, then pour in boiling water. Knead the dough so that the surface is slightly sticky. Roll it into a ball and refrigerate for 30 minutes.
The pie dough should be firm and slightly sticky.
- Grate apples, add finely chopped prunes to them. Mix with 2 tablespoons of sugar.

Divide the chilled dough in half. Roll each part into a layer and put ½ of the filling on them.

Line a baking dish with baking paper and place the pieces tightly together in it. Sprinkle with peanut petals and remaining sugar on top. Place the dish in an oven preheated to 180 ° C for 30 minutes.

Lean chebureks with potato and mushroom filling
Baking can be more than just sweet. Try serving family and friends with fried meatless pasties. Surely you will cook them not only in the Post!

For chebureks you will need:
- 2 cups of flour;
- 1 cup very hot water
- 2 tbsp. l. olive oil + 0.5 cu. for frying;
- 500 g potatoes;
- 4 champignons;
- 1 clove of garlic;
- 1 tbsp. l. soy sauce;
- 1 pinch of salt;
- 1 pinch of ground black pepper;
- 0.5 bunch of parsley;
- 1 chili pepper
Instead of champignons, you can use any mushrooms you like. For example, I love fried chanterelles; for lean pasties, they are just an excellent filling. You can add more if you like.

Peel the potatoes, rinse well, cut into pieces and boil, slightly salt, until tender.

Prepare the dough: pour olive oil, hot water into the sifted flour, salt and knead. The dough should be soft and elastic. Wrap it in plastic wrap and leave it on the table until it cools.

Chop the onion finely and fry it until transparent, adding 1 tbsp. l. olive oil. Chop the garlic or squeeze through a press.

Rinse the mushrooms, peel and cut into small cubes. Place them in a skillet with onions and fry until tender. Then add garlic, chili, black pepper, soy sauce.

Make mashed potatoes from the boiled potatoes. Drain the water into a separate container and add a little while you crush the potatoes to get a medium consistency. Put the mushrooms and onions in the puree.

Rinse the parsley, let dry and chop finely. Add it to the potato filling, season with salt and pepper. Stir well, let cool.

Roll out the dough as for dumplings. Cut it into 10 equal pieces. Roll each part very thinly, adding flour if necessary. Put 1.5 tbsp on one half of the layer. l. filling and cover with the other half. Pat the cheburek lightly to release all the air. Press the dough along the edge with your fingers, cut off all excess with a knife. Use a fork to press down on the edges of the cheburek.

Lean cake with oranges
It turns out that in Post you can pamper yourself with a real cake with cream. And even a biscuit can turn out great without eggs and milk.
Treat yourself to cake on fast days
For an orange cake, use the following foods:
- 700 ml orange juice (200 ml for biscuit, 500 ml for cream);
- 6 tbsp. l. orange zest (3 tbsp. l. for biscuit, 3 tbsp. l. for decoration);
- 100 ml of vegetable oil;
- 240 g sugar (200 g for biscuit, 40 g for cream);
- 1 g vanillin (0.5 g for biscuit, 0.5 g for cream);
- 40 ml of wine vinegar;
- 290 g wheat flour;
- 1 tsp salt;
- 1.5 tsp. soda;
- 3 tbsp. l. water for dissolving soda;
- 2 tbsp. l. almond flour;
- 2 tbsp. l. semolina.
This cake is not for every day, but rather for special occasions, because its preparation will take you at least two hours.

Combine orange juice, vanillin, vegetable oil, sugar and zest in one bowl. Beat until sugar is completely dissolved. Then add the wine vinegar and beat for a few more minutes.

Add flour and salt to the juice mixture. Continue whisking on low mixer speed until smooth.

Dissolve the baking soda in water, add it to the dough and stir quickly. The mass will increase in volume and become lighter.

Pour the dough into a mold (the optimal diameter for this amount is 26 cm), having previously greased it with vegetable oil and sprinkled with flour. Place in an oven preheated to 180 ° C for 35 minutes. When the crust is golden brown, check its readiness with a match or toothpick.

Now let's prepare the cream. Mix almond flour with semolina and sugar, add vanillin. Pour in orange juice and cook like semolina for 20 minutes. When the cream thickens, refrigerate and whisk.
It is very easy to make lean cream from semolina and juice.

Cut the crust in 2 pieces lengthwise. From the inside and from above, smear it with cream, decorate with zest.

Lenten Pie "Monastyrsky", cooked in a multicooker
Making this cake will take time and attention from you - prepare all the necessary foods in advance so that they are at your fingertips.
You will need:
- 400 g flour;
- 2 tbsp. l. honey;
- 200 ml of water;
- 200 g sugar;
- 100 ml of sunflower oil;
- 2 tbsp. l. baking powder for dough;
- 50 g sesame seeds;
- 100 g pumpkin seeds;
- 100 g of berries;
- 1 pinch of salt;
- 1 bag of black tea.
The traditional recipe for Monastyrsky pie includes walnuts. But if they are not there, you can replace them with sesame seeds.
Let's start cooking.

Boil the kettle - you need boiling water for the dough. Place the berries in a plate. If they are frozen, defrost them first.

In a deep bowl, combine sugar, vegetable oil and honey softened in a water bath. Stir everything with a wooden spatula.

Brew a tea bag in boiling water. It is desirable that it be very strong. Pour it into a bowl of sugar and honey, mix. Add baking powder and wait until foam appears on the surface.
For the test, you need strong black tea.

Add berries, nuts or sesame seeds and pumpkin seeds immediately to a bowl. Mix everything gently.

Lightly salt the mixture and add the sifted flour. Knead the dough, which should be of medium consistency - not liquid and not tight.
Be sure to sift the flour before adding to the dough.

Lubricate the inside of the multicooker bowl with vegetable oil and transfer the dough into it, level the surface. Select the "Baking" mode on the appliance, set the time to 65 minutes.
