The hot, blessed summer is over, and with it almost all gardening concerns have gone. Autumn has come into its own, days are getting shorter, evenings and nights are colder. What can warm us in this, it would seem. A bleak time? Well, of course, a lovingly set table and hot tea! And what do you like most for tea? That's right: homemade fragrant pastries. Autumn is the time not to rush to the store for the right products. Almost everything we need is at hand, grown independently in the garden, vegetable garden, or harvested in the forest. I want to offer you my favorite recipes, according to which I often bake pies, muffins and cakes for the delight of family and guests.

What can apples be useful for?
Apples are just a klondike for the hostess who loves to create in the kitchen. Usually there are a lot of these fruits, and after the Apple Savior they literally have nowhere to go. We roll apple compotes into jars, dry apples, cook jam from them. But all this will be used in winter, and now, while the apples are still not getting smaller, we use them for baking. Apples are a very healthy and self-sufficient product. They contain a lot of vitamins and beneficial organic acids, which makes this fruit a real helper for those who want to lose weight.
You will simply be surprised how many dishes are made using apples. These are not only the usual jam, compote and pies with filling. In fact, apples are used in sauces, salads, lecho, dressings, appetizers, and even soups and main dishes! Some varieties of apples have a sourness, which sets the basic note of food, so the fruit is used in dishes we are used to, for example, meat, and for preparing exotic, refined products. Apples in any form will be a real decoration of your table, both on holidays and every day. The main thing is to find out more recipes and not be afraid to experiment. Today we will talk about the simplest and easiest baking options that will fill your home with aromas and comfort.
Apple biscuit - fast and tasty
The simplest recipe that does not require large expenditures and a lot of time, so to speak, in a hurry, is a biscuit with apples. Sometimes it is called charlotte, which in the classic version is a little more difficult to prepare. For this dish you will need the following products:
- Chicken eggs - 6 pieces;
- Granulated sugar - 1 glass;
- Wheat flour - 1.5 cups;
- Milk - 0.5 cups;
- Salt - 0.5 teaspoon;
- 1 teaspoon, slaked with vinegar, or the same amount of baking powder;
- 3-5 medium sized apples.
It is advisable to take apples of sour varieties. Winter is perfect, they are hard enough and will not soften in the oven. Often recipes suggest cutting apples into slices, sprinkling with sugar and leaving for a while. I have a slightly different approach, as I really love the acidity in apple pies.
So, peel the apples from the core, if desired - from the peel, and cut into slices. The size of the slices can be determined according to your own taste, but the classic version is flat slices of the same size, 3-5 mm thick. Sprinkle them with sugar (for 4 large apples, 0.5 cups of sugar is enough), and immediately put a clean, dry frying pan on the fire. When the dishes are hot enough, add 2 tablespoons of flour to it and spread over the surface . Fry the flour for 1-1.5 minutes and place the apple slices in a thin layer. Fry them on both sides for half a minute, after all the slices have been processed this way, put them in a bowl and leave to dry.
Now let's start the test.
- Take eggs, separate the yolks from the whites.
- Beat the whites with a mixer until a strong foam, add sugar in a thin stream and continue to beat.
- Then add the yolks while stirring.
- Heat the milk a little, it should not be cold or hot.
- Pour it into the dough piece and beat thoroughly, then add flour and baking powder.
- While the dough is working, take a baking sheet and line it with foil or parchment paper for baking, sprinkle with a thin, even layer of flour or oil. Don't have a silicone baking dish yet? Be sure to buy! The dough doesn't stick to it and you don't need oil to lubricate.
- Place apples in a thick layer on the bottom of a mold or baking sheet and cover with dough.
- Place the dishes in an oven preheated to 180 degrees and leave there for 20-25 minutes, checking readiness from time to time.
Poetry of an autumn evening - Tsvetaevsky apple pie
Do you like to read lyrical love poems in the rays of the setting sun? And how pleasant it is, enjoying the last September warmth, to sit with a volume of Marina Tsvetaeva on the terrace, with a cup of hot tea, inhaling the aroma of apple pie. This recipe, named "Tsvetaevsky Apple Pie", has become a classic of Russian cuisine and has rightfully earned the title of one of the best desserts. To make this jellied pie you will need:
- 150 grams of butter;
- 2 cups wheat flour for dough and 2 tablespoons for pouring;
- 1 teaspoon baking powder or baking soda, slaked with vinegar
- 6 tablespoons of sour cream, of which 4 spoons will go to the dough, and 2 spoons will be used for pouring;
- 5 medium sized apples;
- 150 grams of cottage cheese;
- ¾ glasses of granulated sugar;
- 1 teaspoon vanilla (you can use the same amount of ground cinnamon)
- 1 chicken egg.
Melt butter in a water bath. Sift flour into a deep bowl, add baking powder. If using baking soda, extinguish it into the already prepared dough. Add sour cream and butter to a bowl with flour, mix thoroughly. The dough should be tender, not sticky to your hands. Take the form in which the cake will be baked, distribute the dough over it so that the sides are 3-4 cm high. Now we will deal with the filling. Wash and peel the apples, cut them into wedges. In a separate bowl, combine cottage cheese, sour cream (2 tablespoons), sugar, vanilla, cinnamon and 2 tablespoons of flour. You can first put the apple wedges on the dough in the mold, and then add the pouring. Or you can mix apples with filling, and place everything together in the form. Spread the filling evenly over the dough, and if the sides protrude from the surface, crush them a little. Tsvetaevsky apple pie is baked for 50 minutes in an oven preheated to 180 degrees Celsius. Chill the finished cake, and a wonderful dessert is ready for tea!
A slightly unusual solution: apple pie with sorrel and mint
In such a pie, the filling is unsweetened, so it is suitable both for tea drinking and for main courses. If you have a bread maker, great: it will come in handy for kneading dough.
- Take 600 g of flour, sift thoroughly, you can several times. From the total mass, take 100 g of flour and add to the bucket of a bread machine.
- Add 7 g of dry yeast to the rest of the flour poured into a bowl, mix. Add 75 g pre-softened butter, 60 g sugar, stir again with your hands.
- Beat 2 chicken eggs, add 1 teaspoon of salt, pour into the bulk and add 250-300 g of kefir. Stir well and leave for 10 minutes for the dough to come up and the gluten to swell.
- After the appointed time has passed, send the dough to the bread maker and set the kneading on the "Pelmeni" mode.
- When the set mode is completed, remove the dough from the bucket and knead it with your hands for 5 minutes. Leave it in a warm place until it doubles in size.
- Remember the dough again. The movements should be soft and smooth so that the mass is saturated with oxygen, and does not lose it. Then leave the dough for another half an hour to fit again.
While the dough is gaining volume, prepare the filling for the pie. You will need 3 bunches of sorrel, 3 medium apples, 2 sprigs of mint, 2 stems of rhubarb. Clean, rinse and dry these foods thoroughly. Finely chop the sorrel, mint and rhubarb, sprinkle with 20-30 grams of sugar, remember a little and leave for 15 minutes. Then fold in a colander so that the mass is not too wet. The leftover juice will come in handy to soak the biscuit.
Peel the apples, cut into slices, cover with 50 grams of sugar, leave under the plastic for 15 minutes. Drain the juice and stir in the sorrel mixture. Divide the dough into two equal portions. Roll out the first part and place in a pre-greased mold, leaving an allowance for the edges. The second part of the dough will be needed as a cake lid, so after rolling it into a round layer, make cuts on it and lay out the strips in the form of loops. Put the filling on the dough in a mold, wrap the edges, and cover with a decorated lid on top. Bake until tender at 180 degrees.
Sweet Life: Caramel Apples in Bagels
Try this wonderful recipe. It is simple and does not require large expenditures both in terms of money and time.
- The ingredients of this dish:
- Apples - 5-6 pcs;
- Flour - 500 g;
- Chicken eggs - 2 pcs;
- Sour cream - 100 g;
- Butter - 100 g;
- Milk - 100 g;
- Honey - 3 tablespoons;
- Sugar - 50 g for the dough, 100 g for the filling;
- Dry yeast - 2 tsp;
- Brown sugar for dusting - by eye.
Heat the milk a little in a glass, dissolve the sugar in it. Pour dry yeast on the surface, but do not stir, but cover with a napkin and leave until a yeast cap forms. Finely grate frozen butter into flour and rub thoroughly with palms.
When the yeast is activated in a glass of milk, pour it into the prepared flour with butter, add eggs, sour cream, salt and vanilla. Stir well. At the same time, do not add additional flour, stir with your hands until the dough becomes elastic and falls off your hands. Use a bread maker if possible. Place the dough in a bowl and leave in a cool place for 2-3 hours. In the meantime, get busy with the filling.
- Peel the apples, core and cut into cubes, pour over with lemon juice.
- Transfer the mixture to an aluminum pot and cover with sugar. Cook over low heat, stirring occasionally.
- Apples will first let the juice out, but it will evaporate during cooking. You will be left with a thick filling, slightly sour and with a lemon scent.
Now take out the dough and divide it into 3 pieces. Roll out circles 30-40 cm in diameter and cut each of them into triangular sectors. Put the filling at the base of such a triangle, roll the bagel. Leave the prepared bagels for a while so that they come up, doubled. Brush with beaten egg and sugar and bake for 15-20 minutes in preheated oven.
