Those with a sweet tooth know how important it is for their favorite desserts to be light and airy. And I would also like their preparation not to take so much time and effort. We have a recipe for such a cake, which you can make in less than half an hour from the minimum available products - a cookie cake with cottage cheese, which does not need to be baked.
Curd cake with berries in jelly
Fresh berries are a great addition to any cake. Thanks to them, our dessert will become even lighter and juicier.
Berries will make this cake even juicier and tastier.
You will need:
- 200 g of shortbread cookies;
- 100 g butter;
- 400 g of cottage cheese;
- 400 g sour cream 15–20% fat;
- 10 g of powdered gelatin;
- 120 g sugar;
- 1 packet (8-10 g) vanilla sugar;
- 1-2 bags of ready-made jelly;
- any berries or fruits of your choice.
An equal ratio of sour cream with cottage cheese is necessary for the filling in the cake to be especially tender. And for the base, take any biscuits with a crumbly structure, for example, "Maria", "Jubilee" or sweet crackers. Cottage cheese can be any, but it is better to use with a fat content of 5%, with small grains.

First, prepare the base. To do this, grind the cookies into flour in a blender and pour into a deep bowl. Pour melted and cooled butter there. Mix everything thoroughly so that each grain of cookie is saturated with oil.
The butter will soften the cookie crumbs, making them a homogeneous mass.

Take a split form (for this amount of food, a container with a diameter of 22 cm is suitable). Line the bottom with parchment paper. Add oiled crumbs and spread evenly. You can tamp them lightly with your fingers so that the layer thickness is the same.

Put the mold with the base in the refrigerator for a while and prepare the curd layer. In a separate deep bowl, combine sour cream, cottage cheese, sugar and vanillin and blend until perfectly smooth. Sugar and grains of cottage cheese should completely dissolve.

Soak the gelatin by diluting it in 100 ml of cold water, wait until the granules swell. How much time it will take, check on the packaging. Warm up the swollen mass a little so that the granules are completely dissolved. This can be done in a water bath. But keep in mind that the gelatin should not boil.

- Let the gelatin cool slightly and pour it into the curd cream in a trickle. At the same time, constantly stir the mass with a whisk so that all components are evenly distributed.
- Remove the base mold from the refrigerator. Pour a layer of curd-gelatin mixture over the oiled biscuits, spread evenly. Refrigerate for 2–4 hours to completely solidify the light layer.

When the dessert hardens, garnish with berries and fruit pieces in no particular order. After that, prepare instant jelly according to the instructions on the package, pour a small amount over the berries and fruits. Put in the cold for 10-15 minutes to set the jelly, then pour out the rest and send it back to the refrigerator.

When the cake is completely frozen, remove it from the refrigerator and gently pull it out of the mold by running the knife along the sides. Transfer dessert to a platter and garnish with mint sprigs.

You need a whole cookie for this cake
Ingredients:
- 300 g shortbread cookies with cocoa;
- 250 g of cottage cheese;
- 250 g sour cream;
- 100 g sugar;
- 1 tbsp. l. gelatin granules;
- 75 ml of water;
- small chocolate bar for decoration.
Let's start cooking.
- Pour the gelatin in a bowl with water and let it brew for 10-15 minutes, then completely dissolve it in a water bath.

Put sour cream, cottage cheese and sugar in a blender. Whisk well to form a soft, homogeneous cream. Pour in the dissolved gelatin and stir again.

Put cookies in a prepared form in a dense layer and fill with cream. Then another layer of cookies and cream. You should have 3 layers.

Cover the cake pan with cling film and refrigerate overnight to soak the cookies. Take it out the next morning, carefully transfer it from the mold to a dish and decorate with grated chocolate.

By the way, this cake can be prepared in several versions. For example, alternate layers of chocolate and white cookies. Or take a regular cookie and make a chocolate cream by adding a couple of teaspoons of cocoa to it.
Banana cake no baked
This dessert will be even lighter than the previous ones, because instead of sour cream we use natural yogurt. And in addition to it will be a banana.
So, take the following foods:
- 300 g (2 pcs.) Ripe bananas;
- 100 ml of water;
- 10 g (1 tbsp. L.) Gelatin;
- 150 ml unsweetened natural yogurt;
- 100 g butter;
- 200 g of shortbread cookies;
- 50 g sugar;

400 g of fatty cottage cheese.

As before, pour the crushed cookies with melted butter and mix thoroughly. Place the resulting oil crumbs in a mold and tamp. Refrigerate.

In the meantime, get busy with the filling. Pour gelatin with water to swell. Use a blender to thoroughly beat the yogurt, cottage cheese, bananas and sugar. Pour the gelatin dissolved in a water bath there and mix again.

Pour the crumbs into the mold with the prepared filling. Refrigerate for 3 hours.
