As soon as the first zucchini are on sale, I always fry them, season them with mayonnaise or ketchup, chopped fresh dill and grated garlic. Those who know the taste of such a dish will understand when I say that it is impossible to tear yourself away from it until the plate is empty. But towards the end of the season, when large-sized zucchini are more and more often on the shelves, I have a period of pancakes, pancakes and rolls with the addition of a green handsome man. This is explained by the fact that large vegetables have a rather hard peel and very small seeds that are not suitable for food. But the pulp remains tasty and beckons to perform new culinary feats. Ingredients:

  • 2 zucchini;
  • 2-3 tbsp. l. flour;
  • 1 head of onion;
  • 4 eggs;
  • 300 g minced chicken;
  • 100 g of hard cheese;
  • fresh herbs to taste;
  • salt and black pepper;
  • vegetable oil.

Preparation:

  1. Grate the zucchini peeled from the peel and seeds on a grater with large holes. Squeeze out the vegetable mass to get rid of excess juice.
  2. Beat the eggs with salt and black pepper, adjusting the amount of spices to your liking. Pour the resulting mixture into a container with grated zucchini.
  3. Add chopped fresh herbs to the "dough", mix everything.
  4. Pour in the sifted flour, mix the mass thoroughly again so that there are no lumps left.
  5. Preheat the oven to 200 degrees.
  6. Place the squash dough on a baking sheet lined with baking paper and spread evenly over the entire surface with a spoon.

  7. Bake the vegetable crust for 15–20 minutes until lightly browned.
  8. Fry finely chopped onions in a small amount of vegetable oil until transparent.
