Did you know that charlotte appeared in the 18th century, and its invention was dedicated to Queen Charlotte, the wife of King George III of England? The charlotte of that time is not very similar to what we are preparing now, since it was made from the leftover bread, which was considered unacceptable to throw away at that time. Let's try using an old recipe in a modern setting.
The classic charlotte was invented back in the 18th century.
You will need a loaf or loaf of wheat bread. If they are a little stale, then this recipe is just right. Remove the crust from the loaf, cut into thin slices.
Melt about 100 grams of butter and dip each slice of bread thoroughly.
Take a small saucepan, grease its walls from the inside with butter. Line the bottom and sides with slices of white bread soaked in butter.
Peel a few apples (3-5), chop finely and put in another saucepan. Cover with 150 grams of sugar, add a little cinnamon (literally a pinch) and a tablespoon of butter. Simmer over high heat, stirring constantly, until the apples are tender. Place this mixture in a saucepan with slices of bread. Top with a few more slices of the same soaked in oil and sprinkle with breadcrumbs.
Preheat the oven to 180 degrees and place a saucepan with a charlotte no more. Than half an hour.
This is not the final version of the classic charlotte. The French brought their own flavor to the recipe, and you can try it too, because it's not difficult at all. The peculiarity of the recipe is in the custard, which is coated with layers of bread and apples, from which the charlotte resembles a cake in structure. This recipe is more complicated than a quick charlotte, but trust that your guests' reviews will not let you regret the time spent. Take these products:
- 1 cup crushed rye bread crumbs
- 3 cups grated stale black bread
- 100 g butter
- ½ tsp ground cinnamon
- 1 lemon (zest)
- 3 cloves
- 1 tbsp candied orange
- 1 cup of sugar
- 6-8 apples
- ½ glass of white wine
- 30 ml rum
Combine rye and black rusks and cover with melted butter. Stir well, fry in a pan, add crushed cloves, cinnamon, half a cup of sugar, half chopped candied fruit and half the zest.

Dilute white wine with water in 1: 1 proportions, boil with the remaining half of the sugar.
Peel the apples from the core, chop finely, add to the wine syrup and boil for 5-7 minutes. Pour in a glass of rum.
Grease the form with butter, sprinkle with sugar. You can lay the bottom of the mold with oiled paper. Lay out a layer of crackers, apples, again a layer of crackers. Spread in turn so that the top is covered with bread. Smear a little with a plate, bake in the oven for 15 minutes.

You will need:

- 1 cup flour.
First, prepare the apples: peel and core them, cut, place in a bowl and sprinkle with lemon juice.
Some people like to add more apples to the charlotte. Do not overdo it so that all the dough does not remain in the gaps between the pieces. It is also possible not to peel apples from the peel, since during the cooking process it becomes soft and aromatic.
Beat the eggs over a uniform foam. To make whipping easier, pre-chill the eggs and add a pinch of salt to them.
Continuing to beat, add sugar gradually until it dissolves completely. After that, add the flour in a spoon, stirring thoroughly so that no lumps remain. The dough should turn out like thick sour cream in consistency.

Grease a multicooker pan with oil and pour in a little dough, spreading it so as to cover the bottom and part of the walls with a small side. In this case, the thickness of the dough will be about 0.5 cm.
Place the apples, top with the remaining dough and shake slightly (but not so much that the apple slices and the dough mix!). you can add another layer of apples.
Turn on the "Baking" mode on the multicooker, set the time - 60 minutes. While the charlotte is cooking, do not lift the lid to prevent the dough from dropping in the process. The more apples you have, the longer it may take to bake. After turning off the charlotte, you need to leave it in the multicooker for another 10 minutes, and after that remove it from the pan.
The bread maker is another helper in the kitchen
As you can see, there are a lot of options and methods for making charlotte in modern kitchen. If you have a bread maker at home, it's a sin not to use it.
Take these products:
- 3 eggs;
- 200 gr. flour;
- ¼ tsp soda, slaked with vinegar, or baking powder;
- 200 gr. Sahara;
- 3-4 sour apples;
- raisins, cinnamon.
Prepare apples in the same way as in the previous recipes: peel, chop, sprinkle with sugar and cinnamon.
Prepare the dough: beat the eggs with sugar until a homogeneous foamy mass, add flour, mix thoroughly so that there are no lumps left. Redeem soda in the dough, hang again.
Take a bowl of bread maker. Since you have already kneaded the dough, you do not need a spatula for mixing the ingredients - remove it. Lubricate the sides of the bowl with butter.

Combine the dough with prepared apples, stir. Put the mixture in a bowl and place in a bread maker.
Select the Baking or Cupcake setting. The bread maker is good because it calculates the required time according to the mode. Now you can calmly go about your business until the timer beeps to signal the end of cooking.
