For ease of transportation, exotic fruits are picked unripe, so they get to our region during the ripening process. Unripe fruits contain a large amount of insoluble starch, which is poorly absorbed in the intestines. In order for the starch to turn into sugar, and the banana to retain its taste, aroma and beneficial substances in the composition, certain conditions must be observed:

  • low air humidity (up to 35%);
  • room air temperature (22–26 ° C);
  • good air circulation.

It is impossible to meet these requirements in the refrigerator. In the cold, bananas ripen at an accelerated rate, and the starch they contain is no longer processed into sugar. As a result, it turns out that the fruits become ripe, but at the same time they lose 80% of their beneficial properties.
