Silver carp is the most suitable for cooking fish a la herring. It has the required meat density and fat content. There are many recipes, most of them based on pickling. But there are some in which you do not need water or salt. A sample list of products includes:

  • water;
  • salt;
  • sugar;
  • vinegar;
  • vegetable oil;
  • Bay leaf;
  • onion;
  • allspice and black peas.

The ingredients may vary depending on the recipe. You can add coriander or cloves to taste.

It is better to take sunflower oil, necessarily refined, otherwise the cooked silver carp will taste bitter. When it comes to fish size, use a large specimen, but be sure to check for freshness

Table vinegar should be 6 or 9%. The amount of ingredient used in a particular recipe may depend on its "strength".

Cooking silver carp "under herring"

The simplest silver carp herring recipe is based on pickling. For it you will need:

  • silver carp - 1.4 kg carcass;
  • 5 tablespoons of salt;
  • 3-4 tablespoons of vinegar;
  • 1 tablespoon sugar
  • 3-4 tablespoons of sunflower oil;
  • 1 liter of water;
  • bay leaf and pepper to taste.
  1. Clean the silver carp, gut and rinse thoroughly.

  2. Cut off the tail, head and fins. If necessary, you can use special scissors. They can easily cut off the fin by breaking it at the very carcass of the fish.

  3. Use a large chef's knife to cut the carcass along the ridge.
  4. From the ridge side, it will be difficult to cut the fillets into thin strips. To make it easier for yourself, use a hatchet (chop) or make notches in the thickened part with a saw knife. Using them, you can easily cut the fillet into strips.

  6. Prepare the marinade in a separate bowl. To do this, add salt, vinegar and sugar to very hot water, mix thoroughly and cool slightly.

  7. Pour sunflower oil into a saucepan with fish, put pepper and lavrushka. Pour in the marinade and stir well to distribute the liquid evenly. Let cool completely and place in the refrigerator for a day under oppression.

Fish in a jar without water

This silver carp herring is distinguished by its special softness and delicate, spicy taste. Take a large fish (up to 2 kg, so that after cleaning the fillet weight is at least 1 kg), onions, water, salt, bay leaf, allspice and black peas, vinegar and vegetable oil.

  1. Brush the fish. Cut off the head and remove all bones without skinning the carcass.
  2. Cut the resulting fillet with skin into slices up to 2 cm thick, put in a bowl. Salt, mix well (but do not crease so as not to damage the fillet), leave for 15–20 minutes.
  3. While the fish is salting, take a few large onions (the bigger the better), peel them and cut them into half rings.
  4. Mix boiled cold water with 6% table vinegar in a 1: 1 ratio. Pour silver carp pieces with this solution, let it brew for another 20 minutes.
  5. Drain the liquid. Fold the fillet pieces into a jar, alternating layers with onion rings. Add peppercorns and bay leaf pieces. Stack tightly, but do not tamp.
  6. Fill the contents of the jar with vegetable oil to the top so that it completely covers the fish and onions.

  7. Cover the jar with a lid, refrigerate for 3 days. Remove and shake from time to time to marinate the silver carp well in oil.

Silver carp prepared according to this recipe can be stored for up to three months.
