Features of tartar sauce
The "core" of the classic tartar consists of 4 products:
- boiled yolk;
- vegetable oil;
- lemon juice (or vinegar);
- green onions.
The composition of the sauce is similar to the composition of mayonnaise, however, for the tartar, they do not take raw, but boiled eggs, which give the dressing a richer taste and creamy consistency

The traditional recipe, invented in France, quickly became overgrown with variations. Veteran chefs and ordinary housewives prepare the dressing by introducing additional ingredients, the most popular of which are:
- garlic;
- onion;
- tarragon;
- parsley;
- pickles;
- capers.
Usually the sauce is served with fish and seafood dishes, vegetables, it is in harmony with steak, fried meat, roast beef, cold roast. Often accompanied by dressing is nuggets, fries, croutons, various salads.
Culinary subtleties
To make a delicious tartare, it's helpful to take note of some simple tips:
- "Zest" of the sauce - small pieces of food, felt in a homogeneous base, therefore additional ingredients introduced into the tartar are cut with a knife or crushed with a grater, and are not processed in a blender in puree;
- it is advisable to take olive oil for preparing the dressing, which will provide original, piquant notes of taste;
- you need to salt the tartar at the very end: the ingredients included in the composition (pickled cucumbers, olives, capers, etc.) can give the sauce a sufficient amount of salt;
- before serving, the dressing must be cooled by keeping it in the refrigerator for 20-30 minutes.

Methods for making tartar sauce
There are many recipes for tartare sauce, here are the most popular ones.
Traditional
The classic sauce is easy to make:
- Mash two boiled yolks with a fork into a gruel.
- Stir in 1-2 tablespoons of lemon juice, a teaspoon of mustard, ground spices (nutmeg, allspice, cloves, coriander).
- Pour in 100 ml of vegetable oil in a thin stream, constantly whisking the mixture with a whisk, blender or mixer.
- When the structure of the mass begins to resemble mayonnaise, stir in finely chopped green onions. After adding the last ingredient to stir the sauce, you can no longer use a blender or mixer.

The described recipe can be used as a base one, adding additional ingredients to it: finely chopped pickled cucumbers, olives, chopped garlic, etc

With raw yolks
Some recipes involve adding both raw and boiled yolks to the sauce. For such dressings, only fresh homemade eggs are suitable. Here's one way to cook:
- Grind the yolks of 2 boiled eggs into a gruel and combine with 2 raw yolks and 40 g of mustard.
- Whisking the mass constantly, slowly pour in 120 ml of oil.
- Add 120 g sour cream, a tablespoon of chopped green onions, grated pickled cucumber and finely chopped boiled whites of 2 eggs. Stir the mixture with a spoon.
- Add salt, sugar, lemon juice or vinegar to taste.

With sour cream
The sour cream tartare variation is perfect for dishes of beef, fish, nuggets:
- Grind 2 boiled yolks with a fork and combine with raw yolk.
- Stir in a teaspoon of mustard, slowly, constantly whisking with a blender or whisk, add 2/3 cup of oil.
- Add 2 tablespoons of sour cream, finely chopped capers (a tablespoon) and pickled cucumber, a tablespoon of wine vinegar.
- Stir the mixture with a spoon.

Tartare can be made on the basis of purchased mayonnaise and sour cream: this will save time, but the taste of such dressings is significantly different from the classic one.
With mayonnaise
To prepare the dressing, any purchased mayonnaise will work, if possible, you can use homemade. The sauce is prepared like this:
- Cut 2 pickled cucumbers into small cubes, chop 2 cloves of garlic with a press, finely chop a bunch of dill.
- Mix prepared foods with 4 tablespoons of mayonnaise and pepper.
With sour cream and mayonnaise
It will take no more than 5 minutes to prepare a delicious and original dressing:
- Mix 2 tablespoons of sour cream with 2 tablespoons of mayonnaise.
- Add finely grated pickled cucumber, chopped garlic and chopped parsley to the sauce.
