Step-by-step recipe for making boiled pork in the oven

My few attempts to cook boiled pork for the holiday did not end very well. The meat was tasty, but dry. Plus, it constantly seemed that something was missing. But one day, thanks to the culinary Internet pages, I found a wonderful recipe for holiday meat marinated in beer. This turned out to be exactly what you need! Pork cooked in this way is incredibly tasty and aromatic.

Ingredients:

  • 2-3 kg of pork;
  • 1-1.5 liters of dark beer;
  • 1 head of garlic;
  • 4–5 bay leaves;
  • 1.5 tsp. salt;
  • 1/2 tsp thyme;
  • 1/2 tsp oregano;
  • 1/4 tsp coriander seeds;
  • 1/4 tsp black peppercorns.

Cooking steps:

  1. Peel a piece of boneless meat from films and tendons, wash under running water and pat dry with kitchen towels.

    For boiled pork, a part of a ham, a shoulder or a low-fat neck is suitable

  2. Place salt, bay leaf, black peppercorns and coriander, oregano and thyme in a mortar and grind thoroughly.

  3. Peel the garlic. If the cloves are large, cut each in half lengthwise.

  6. Transfer the meat to a suitable sized glass or plastic container and refrigerate for 4 hours.

  7. After 4 hours, fill the pork with fresh dark beer so that the liquid completely covers the meat.

    For the marinade, use any dark beer of your choice.

  8. Place the container in the refrigerator again and marinate for at least 12 hours.
  9. Before baking, drain the marinade and dry the meat well with paper towels.
  10. Brush the meat with a little olive oil or refined sunflower oil.
  11. Wrap the meat in foil, making sure that there are no gaps.

  12. Use a knife to make one hole in the foil. This is necessary so that liquid does not accumulate inside during baking.
  13. Put the workpiece with the hole down in an oven preheated to a temperature of 220 degrees.
  14. Cook the meat for 2-3 hours. Roasting time depends on the weight of the pork piece.
  15. Unfold the cooked meat and cool completely.

In the original recipe, the author advised not to unwrap the foil until after removing the pork from the oven. I like boiled pork with a golden crust. Therefore, 15 minutes before the end of the process, I cut the aluminum "shell" and turn on the grill. Although, I must admit, boiled pork according to this recipe is delicious in any version.
