Mushroom preparations for the winter
Perhaps not everyone loves to pick mushrooms. This is a very exciting activity, and you can endlessly describe the pleasure of it. But not every person will agree on a weekend, in the early autumn morning, when it is still dark and cold, to exchange the comfort of a bed for a trip through the forest. But everyone loves mushrooms cooked by caring hands!
Our ancient ancestors knew many ways to harvest mushrooms for future use. The most common of these are drying and salting. In our time, preservation has practically replaced salting, and there are also many recipes for preparing such dishes from mushrooms for the winter as assorted dishes, hodgepodge, caviar.
Honey mushrooms, especially small ones, are perhaps the most delicious of the mushrooms to be salted. Try a simple recipe for spicy mushrooms with garlic. For cooking you will need:
- Honey mushrooms - 5 kg;
- Garlic - 70 g;
- Peas of black peppercorns - ½ tbsp;
- Allspice peas - ½ tbsp;
- Cloves - 1/3 tablespoon;
- Oak leaves - 5-7 pcs;
- Bay leaf - 7 pcs;
- Horseradish - 5 sheets;
- Salt - 250 g.
Wash honey mushrooms thoroughly under running water. Boil in salted water for 15 minutes, while skimming. Then discard the mushrooms in a colander so that the water is completely drained. Take the dishes (pot, barrel, jar), put horseradish leaves on the bottom. Lay the mushrooms in layers, sprinkling with a mixture of salt, finely chopped garlic and spices. Cover the top layer with horseradish leaves, put the load. After 20 days, your mushrooms are ready.
Recipes for preparing caviar from mushrooms for the winter are very popular. Take on board one of them called "Winter Pleasure". You will need the following products:
- Pre-boiled mushrooms (you can take different varieties) - 1 kg;
- Sunflower oil - 5 tablespoons;
- Mustard - 1 tablespoon;
- Vinegar 5% - 4 tablespoons;
- Black pepper, salt to taste.
Put the mushrooms in a saucepan and cover with marinade (40 g of salt and vinegar per 1 liter of water). Cook over medium heat for no more than 40 minutes, constantly skimming off the foam. Then drain the water and squeeze the mushrooms, let them dry and pass through a meat grinder. Season with salt, pepper, vinegar, mustard and oil. Mix thoroughly, put the mass in jars, boil them in a large container and roll up.
How to prepare cabbage for the winter
What can be called unambiguously a Russian vegetable is cabbage! From time immemorial, it has been fermented in whole barrels in order to provide itself with vitamins for the whole winter, which, as you know, are more in cabbage than in citrus fruits. Now we ferment cabbage in jars, and we do it in a variety of ways.
- The simplest, unsophisticated, but very tasty recipe is pickled white cabbage. Take several heads of cabbage and cut into 8 slices each. Place in a bulky dish - enamel or glass - in several layers, shifting with garlic and coarsely chopped beets. Prepare the marinade: boil 2.5 liters of water, add 3 tbsp. salt, 10 tbsp. sugar, 5 tbsp. vinegar 70%. Pour over the cabbage and leave to infuse for 2 days.
- Red cabbage with plums is not only tasty, but also looks spectacular. Chop finely chopped so that there is enough cabbage for several liter cans. Blanch the cabbage in boiling water for 2 minutes, then drain. Now take large plums, prick them, boil in boiling water for 1 minute. Place in a jar in layers with the calculation of 5 parts of cabbage to 1 part of plums, and add 5 cloves, 5 peas of pepper to each container, and cinnamon on the tip of a knife. Prepare the marinade: boil 1 liter of water, add 200 g of sugar, 80 g of salt and a glass of vinegar 9%. Pour the marinade into the jars.
- Your family will surely like cabbage with vegetables too. Take 5 medium heads of cabbage, cut each with a stalk into several pieces, boil in boiling water for 5 minutes. Peel 1 kg of sweet pepper and blanch in the same way. Finely chop 1 zucchini, a few carrots and tomatoes, large quantities of parsley and dill, chop the garlic. Place the cabbage in a container in layers, sprinkling with vegetables and herbs, and pour over with cooled brine (2 tablespoons of salt per 1 liter of water).
Tomatoes: how to prepare for the winter?
Unlike greens and, for example, bell peppers, tomatoes cannot be kept fresh in the freezer for the winter. But there are plenty of opportunities to pickle tomatoes, use them in salads or process them into sauces.
- If you like spicy, then you will like the Hedgehogs tomatoes. For these, you need firm ripe tomatoes and a lot of garlic. Cut the garlic into thin strips and insert them into the punctures made in the tomatoes (3-4 punctures per fruit). Place the tomatoes in jars, cover with fresh boiling water and leave for 10 minutes. Drain the water, make a marinade out of it: boil, and add salt and sugar at the rate of 1 and 3 tablespoons. for 1 liter. Pour 1 tablespoon vinegar 9% into the jars, pour in the boiling marinade and roll up.
- Ketchup has long been an integral part of any kitchen. Therefore, we suggest making homemade ketchup with apples. Take 2 kg of tomatoes, cut them into several pieces. 500 g sweet pepper and 2 bitter pods, rinse, peel, cut. Do the same with 250 grams of apples and 250 grams of onions. Put everything in a bowl, add 1 tbsp. salt, 200 g sugar, 2 bay leaves and 5 cloves. Cover with water and boil for 2 hours. Wipe the finished mass through a juicer or a sieve, put on fire for another 30 minutes and add 50 g of vinegar 9%.
- Spicy green pickled tomatoes will also delight you with taste. There is no need to stick to the amount of ingredients. First, make the filling: chop peeled hot peppers and parsley. Cut each tomato in the middle, like a book, and put the filling inside. After that, put the tomatoes in a jar, adding a little onion rings, slices of carrots, bay leaves, a clove of garlic, peppercorns. Pour fresh boiling water twice, then make a marinade (for 1 can 2 tablespoons sugar, 1.5 tablespoons vinegar, 1 tablespoon salt), pour over the tomatoes and roll up.
How to prepare bell peppers for the winter: simple tips
Bulgarian pepper has long been loved by our hostesses for its taste, juiciness and versatility. There are many recipes for its preparation, including preparations for the winter. We will tell you some of them.
Pepper pickled in tomato for stuffing. This is a semi-finished product; in winter, such a pepper is ideal for stuffing. You will need:
- Sweet peppers (fruits must be ripe, strong, not damaged);
- Tomatoes;
- Sugar;
- Salt.
First, pass the tomatoes through the juicer: you should get tomato juice. Bring it to a boil and add sugar and salt to taste. Peel and rinse the peppers, blanch them in the tomato for a couple of minutes. Make sure that the fruits are not overcooked.
Put the peppers in a pre-sterilized jar and fill with the finished tomato. Roll up the lid and leave it upside down for a day. After that, the banks can be lowered into the basement.
There is an easier way to roll peppers for stuffing. It does not require tomato juice, and it is enough to wash the peppers properly, you do not need to clean the seeds. Just blanch the fruit in the marinade, put it in a jar, fill it and roll it up. True, you will have to peel these peppers and water them with tomato when stuffing.
Try a popular Hungarian dish like lecho. It goes well with boiled potatoes, pasta, and rice porridge. Stock up on these products:
- About 5 kg of pepper;
- Onions - 1.5 kg;
- Tomato juice - 1.5 l;
- Carrots - 0.5 kg;
- Vinegar 9% - 200 g;
- Sunflower oil - 250 g;
- Sugar - 200 g;
- Salt - 2 tablespoons
Peel the peppers and cut them into 2 cm strips. Chop the onions in half rings and grate the carrots on a coarse grater. Place the whole mass in a saucepan, add tomato juice, salt, sunflower oil, sugar and vinegar. Lecho should boil for at least 30 minutes. Remember to stir constantly! Arrange in jars, roll up and put upside down to cool.
How to prepare cucumbers for the winter
Juicy crispy cucumbers from a jar - we cannot imagine our winter without this! And each housewife has her own recipes with secrets. Here are some of them.
Do you remember the cucumbers that our grandmothers used to pickle? Sour, tart, in a barrel? They are now closed under a nylon lid, without vinegar. Here's what you need:
- Cucumbers;
- Garlic cloves;
- Bitter pepper;
- Horseradish, cherry, black currant leaves;
- Dill (stems with seed umbrellas);
- Salt (at the rate of 100 g per can of 3 liters).
First, wash and dry the jars thoroughly. Place prepared leaves, dill, garlic, pepper on their bottom. Soak cucumbers in cold water and let sit for 3 hours. Then tamp them into jars. Pour 100 g of salt into each jar, fill it with cold water, cover with a lid and chat it well.
Leave the jar in a warm place for a few days until the brine is cloudy. Now the cucumbers are salted, you can already eat them if you can't wait. After a few more days, they will become truly barrel-shaped.
If you want to leave such cucumbers for the winter, then after they are salted, shake the jars and pour the liquid into a saucepan, boil it by adding the right amount of water (the cucumbers have absorbed some of the brine), pour into a jar of cucumbers and roll up.
Recipes for assorted blanks for the winter
Assorted vegetables are the most practical option for preservation. Indeed, in this case, you can roll up all the vegetables in one jar - cucumbers, tomatoes, zucchini, carrots. They can be used to decorate dishes, make a salad from them, and simply serve them on the table.
You can put whole vegetables in a jar of assorted vegetables, or you can cut them into pieces - as your imagination tells you. We are pleased to offer you a simple recipe for an assorted preparation for the winter, which will not take much time.
Take three-liter jars and mix cucumbers, onions, zucchini, garlic, tomatoes, carrots, bell peppers, cherry and currant leaves, an umbrella or a branch of dill in them. Pour boiling water over and leave for 5 minutes. Then pour the water into a saucepan, put it on medium heat and add during the boil (based on a volume of 3 liters of water):
- Salt 3 tablespoons,
- Vinegar essence 3 tsp
