The second life of mashed potatoes: how to make 6 delicious meals from leftover lunch
Yesterday's mashed potatoes are a dubious pleasure: no matter how you reheat a cooled dish, it will not taste the same. But if you connect a little imagination and add a couple of the simplest products, the dried potatoes will transform, turning into an appetizing breakfast, lunch or dinner.

Potato zrazy
Potato zrazy familiar to many Slavic peoples can be called lazy potato pies. They are prepared with different fillings, but we suggest you start with mushroom.
You will need:
- 1.5 kg mashed potatoes;
- 1 egg;
- 500 g of champignons;
- 1 onion;
- 100-120 g flour;
- vegetable oil for frying;
- garlic;
- pepper;
- salt.
Cooking.

Chop an onion and fry it quickly until golden brown.
The onion will be fully cooked in 8-10 minutes.

Chop the mushrooms and add them to the onions. Season with salt and pepper.
Instead of champignons, you can take other mushrooms to taste

After 12-15 minutes add 1-2 cloves of garlic, peeled and passed through a press, to the pan and extinguish the heat. Important: drain off excess liquid, otherwise the infection will fall apart.
The excess liquid must be evaporated or drained, and the mushrooms must be set aside to cool

In a bowl of mashed potatoes, add flour, egg and knead the dough.
If you salted the puree, there is no need to add salt to the dough.

Take a batch of dough large enough to form a palm-sized cake and place a spoonful of the filling in the center.
If the dough turns out to be too tender, add flour or sprinkle it on the zrazy after blinding them - the cakes should not creep

Pinch the edges of the flatbread and form a rounded patty.

Nests with meat
Potato nests can be served without a doubt even on a festive table. It would never occur to anyone that this dish is made from leftovers from yesterday's dinner.
You will need:
- 500-600 g mashed potatoes;
- 350 g of boiled chicken fillet;
- 80 g of hard cheese;
- 1-2 eggs;
- 1 onion;
- 1-2 tbsp. l. butter;
- vegetable oil;
- spices to taste;
- salt.
Cooking.

Finely chop the chicken fillet or pass through a meat grinder.
Grind the fillet in any way convenient for you

Chop the onion and fry in butter.
Do not forget to stir the onion, it burns quickly

Mix the mashed potatoes with the egg, salt, if necessary, and mash properly.
Mix the puree well to distribute the eggs evenly in the potato mass.

Cover the baking sheet with baking paper or grease with vegetable oil and use a pastry syringe to put the mashed potatoes on it in the form of nests with a depression in the middle.
If you do not have a syringe, form the nests with your hands - it will not turn out so beautifully, but still tasty

Combine the chicken fillet with the onion and spread the filling over the nests.
If you want to make the dish more attractive, add pieces of vegetables and herbs to the chicken

Sprinkle everything with grated cheese and bake the nests in an oven preheated to 200 ° C for 15-20 minutes.
Sprinkle cheese on the nest, or break another egg on top, leaving the yolk intact

Sprinkle with chopped herbs before serving.

Lush dumplings
Potato dumplings are used in different ways. Someone cooks them in soup, someone serves them as a side dish, and someone uses them as an independent dish, pouring them with garlic sauce or sprinkling with onions and cracklings. In any case, it turns out delicious.
You will need:
- 750 g mashed potatoes;
- 200 g starch;
- 1 egg;
- salt.
Cooking.

Add egg and starch to a saucepan with mashed potatoes.
It is allowed to replace starch with flour

Knead the resulting mass thoroughly and form medium-sized balls of it smaller than the palm of your hand. Traditional dumplings are supposed to be slightly flattened and made a depression on one side.
Place the dumplings on a floured board

Boil water with a pinch of salt and toss the dumplings into it.
Dip the workpieces into boiling water gently but quickly

Wait until the pieces of potato dough float, boil them for another 5–8 minutes and remove from the pan using a slotted spoon.
Serve the dumplings right away without letting them cool down

If you are planning a soup with dumplings, the prepared pieces of potato dough are placed in a saucepan at the end of cooking, give them time to float and turn off the heat on the stove.
Let the soup steep for 10-15 minutes, so the dumplings will become even tastier
Bacon bombs
If you are a devoted meat lover, and there is a packet of bacon in the fridge, consider that the question with the second course for dinner is removed. Nourishing "bombs" will easily take on this role.
You will need:
- 400 g mashed potatoes;
- 1 egg;
- a few strips of bacon;
- about 100 g of hard cheese;
- breadcrumbs;
- vegetable oil for frying;
- spices, salt.

Cut the cheese into small pieces.
Melted cheese filling turns a treat into a real taste bomb

Combine mashed potatoes with egg and spices and knead well.
It is not necessary to add flour, the "bomb" will hold the egg and bacon together

Filled muffins
You won't surprise anyone with potato casseroles. But potato muffins are a relatively new phenomenon, at least in Russia. If you haven't tried them yet, be sure to do so soon.
You will need:
- 500 g mashed potatoes;
- 1 egg;
- 100 g flour;
- 200 g of boiled chicken;
- 1 onion;
- 1 carrot;
- 3 tbsp. l. green peas;
- 1-2 tbsp. l. mayonnaise;
- any greens;
- butter for baking;
- dry herbs, pepper, salt.

Prepare the base for future muffins from potatoes, eggs, flour and dried herbs.
