Hearty krupenik for breakfast and afternoon tea: 3 recipes for a traditional Russian dish
Ruddy, fragrant, crumbly grains occupy an important place in the traditional cuisine of the Russian people. Most often, such a dish is prepared from buckwheat, however, you can find many related recipes, the basic product of which is other cereals: rice, millet, semolina and even wheat. Krupenik can be a main course, side dish or dessert. Today we're going to talk about sweet varieties of Russian casseroles.
Step-by-step recipes for cooking cereal
Now, when I decided to write this article, I cannot understand how, with my love for a variety of casseroles, I could ignore such an amazing thing as a cereal. And given the variety of food variations, this is generally unforgivable! A hearty and tasty dish is a real find for the whole family. At least in my family, no one refuses to have a krupenik. I offer you some of my favorite recipes among my household.
Buckwheat groats with cottage cheese
A savory casserole that will appeal to both adults and kids.
Ingredients:
- 100 g of buckwheat;
- 250 g of cottage cheese;
- 2 eggs;
- 2 tbsp. l. granulated sugar;
- 1 pinch of salt;
- butter for greasing the mold.
Preparation:
- Boil the buckwheat until tender in slightly salted water, cool.

Beat the eggs with sugar until the crystals of the dry product are completely dissolved.

Place cottage cheese in a bowl of egg mixture.

Mash the fermented milk product with a fork and mix thoroughly with the eggs.

Add buckwheat, mix everything well again.

Put the resulting mass in a greased baking dish.

- Cook the cereal for 35โ45 minutes at 200 degrees until golden brown.

Cool the finished dish slightly, remove from the mold and brush with butter. Serve with condensed milk, jam, natural yoghurt or sour cream.

Rice groats with raisins
An excellent breakfast that will turn the morning into a wonderful holiday.
Ingredients:
- 1/2 tbsp. round rice;
- 1 tbsp. raisins;
- 1/4 Art. granulated sugar;
- 2-3 eggs;
- 2 tbsp. l. butter + for greasing the mold;
- 1/2 tsp vanilla sugar;
- breadcrumbs.
Preparation:
- Rinse the rice well, cover with water in a ratio of 1: 3, bring to a boil and cook over medium heat for 15โ20 minutes. Place the rice in a colander, rinse and leave to drain the liquid.

Transfer the cooled rice to a large bowl, add eggs, granulated sugar and vanilla sugar.

Spoon in softened butter and steamed raisins. Mix everything well.

Transfer the rice mixture to a greased pan sprinkled with bread crumbs.
Place the rice mass into the prepared mold.

Place the dish in an oven preheated to 180 degrees and cook the cereal for 40 minutes until golden brown.

Cut the casserole into squares or triangles and serve warm.

Millet krupenik
Another variant of a delicious dish, in which millet groats are perfectly combined with delicate cottage cheese.
Ingredients:
- 125 g millet groats;
- 250 g of cottage cheese;
- 3 eggs;
- 50 g sour cream;
- 35 g wheat flour + for sprinkling the mold;
- 50 g granulated sugar;
- 1/2 tsp vanilla sugar;
- 10 g butter;
- salt to taste.
Preparation:

- Rinse millet well and boil for 20 minutes.

Cool the prepared porridge completely.

- Transfer the cottage cheese to a bowl, grind, mix with eggs, sugar and a pinch of salt.

Add sour cream to the curd mass, beat everything with a blender until smooth.

Grease a baking dish with butter and sprinkle with a little flour.

Cook the casserole for 40โ45 minutes at an oven temperature of 170 degrees.
