On the eve of Easter: preparing a custard cake
The main holiday of Orthodox Christians is not far off - Easter, the Bright Resurrection of Christ. On this day, the hostesses prepare the best dishes, but the traditional Easter cake invariably remains the crown of the table. There is no single recipe for its preparation, each hostess has her own way and her own secrets. We offer you to bake a soft, airy and aromatic cake on choux pastry. How to make a custard Easter cake
Remember that all food must be very fresh. Otherwise, the cake may simply not rise or turn out to be harsh.
You will need:
- 200 g of milk;
- 720 g flour;
- 100 g dried apricots;
- 10 g salt;
- 15 g dry yeast;
- 20 g vanilla sugar;
- 50 g of brandy;
- 100 g creamy margarine;
- 40 g sour cream;
- 100 g butter;
- 6 eggs;
- 150 g of sugar.

Cover the prepared dough in a deep dish with a towel and leave for 2 hours in a warm place. During this time, knead the dough 2-3 times.

Grease the molds with butter and spread the dough over one third of the height. Cover the molds with napkins and leave until the dough is almost to the top.
Divide the dough into molds and let rise.

Insert a long skewer into the center of the dough pan. This will help the cake rise more evenly when baked. Preheat the oven to 180-200 ° C, place the cakes there and bake until tender. When the surface of the cake is covered with a golden brown crust, pierce it with a skewer: if it is dry, you can take out the baked goods.
