First of all, I want to tell you about my favorite version of cooking vegetable kebabs according to the recipe of Armenian chefs. The recipe is very simple and requires absolutely no culinary experience, but everyone will love the taste of this dish.

Ingredients:

  • 4 eggplants;
  • 4 tomatoes;
  • 4 sweet peppers;
  • 1 head of onion;
  • 1 pod of hot pepper;
  • 1/2 bunch of cilantro;
  • 1/2 bunch of basil
  • salt to taste.

Preparation:

  1. Choose tomatoes, eggplants, and medium peppers, wash and pat dry with paper or regular kitchen towels.
  2. Skewer vegetables, including hot peppers.

Ingredients:

  • 1 eggplant;
  • 1 zucchini;
  • 1-2 bell peppers;
  • 1 red onion head;
  • 5-7 small ripe tomatoes;
  • 1 bunch of cilantro;
  • 3 tbsp. l. olive oil;
  • 1 tbsp. l. wine vinegar;
  • 2 cloves of garlic;
  • 50 g of walnut kernels;
  • 1/2 tsp ground coriander;
  • 2 tsp seasonings for vegetables and mushrooms;
  • salt to taste;
  • red hot pepper (ground) - to taste.

Preparation:

  1. Stock up on the foods you need.

  2. Cut the bell pepper peeled from the stalk and seeds into 4 parts, cut the onion into rings about 1 cm thick, zucchini - into circles with a side of no more than 2 cm.
  3. Also cut the eggplants into thick slices, sprinkle with salt and leave for 15 minutes. After a quarter of an hour, rinse the vegetable pieces under running water and dry. These actions are necessary in order to get rid of the inherent bitterness of vegetables. If you are sure your eggplant variety does not have these properties, you can skip this step.

  4. Transfer all prepared vegetables to a large bowl (don't forget the tomatoes), sprinkle with seasoning, salt to taste, pour over with olive oil and mix thoroughly.

Smelling champignons are also easy to cook on the grill. Mushrooms can be baked on their own or together with vegetables. And in either case, it turns out an excellent meal.

Ingredients:

  • 300 g of tomatoes;
  • 300 g zucchini;
  • 200 g of champignons;
  • 2 sweet peppers;
  • 20 ml of vegetable oil;
  • salt to taste.

Preparation:

  1. Put vegetables and mushrooms in a colander or sieve, rinse, leave to glass with water or dry with a towel.

  2. Leave the tomatoes and champignons whole, cut the zucchini across into 3-4 parts (cut off the spout and stem), divide the bell pepper into quarters.
  3. Alternating between ingredients, string prepared foods on skewers, drizzle with vegetable oil and salt.

  4. Roast vegetables over embers for 5-7 minutes. To prevent the kebab from burning, turn the skewers periodically.

  • 4 medium potatoes;
  • 5 champignons;
  • 1 head of onion;
  • 3 cloves of garlic;
  • 1-2 bay leaves;
  • 1-2 sprigs of fresh dill;
  • 1-2 sprigs of parsley;
  • salt and black pepper to taste.

Preparation:

  1. Cut the peeled potatoes into halves, the champignons into slices, and the onions into half rings.

  3. Place a large piece of baking foil folded in half on the wire rack so that it completely covers the baking surface. Immediately prepare another folded sheet of foil to cover the vegetables.
  4. Place a layer of potatoes on the foil, season with crumbled bay leaves, salt and black pepper.
  5. The next layer is onions.
  6. Send the mushrooms last on the foil, sprinkle with chopped garlic and lightly pepper.

  7. Cover the mushroom vegetables with a second piece of foil and carefully seal the edges of the sheets.
  8. Close the wire rack, place on the grill and cook for 10 minutes on each side.

  9. After 20 minutes, remove the grill from the grill and leave, without opening the foil, for 5 minutes.
