You've made a whole pot of flavorful soup! But the trouble is - it is still hot, but you need to put it in the refrigerator now, otherwise it will turn sour. In such a situation, you need a way to quickly cool the dish. Or you can still put hot..? Let's take a look at the situation.
Why you can't put a hot pot in the refrigerator
There are three reasons why you shouldn't do this:
- a large, hot object (our pot of fresh soup) will dramatically raise the temperature in the refrigerator above room temperature. It will take a very long time to return to the previous low one (about 5-6 hours on average). This will not only reduce the benefits of the refrigerator itself for the rest of the products stored in it, but also create a risk of unit breakdown;
- glass refrigerator shelves do not have high thermal conductivity. If they are not made of the highest quality material, they may crack after you put a hot pot of soup on them;
- the evaporating soup (and since it is hot, it will evaporate anyway) will settle on the refrigerator walls like frost. This coating will reduce its effectiveness and, again, can lead to breakage.
When can I put my food in the refrigerator? As soon as the soup gets warm (that is, when you can safely hold the pan not by the handles with your bare hands), it's time to put it in the chamber.
How to quickly chill a saucepan of soup
But you don't have time to wait for the soup to cool by itself. What can be done?
To prevent the dish from spoiling during cooling, chefs are advised to select a method that will require no more than two to three hours for this. Below, we have selected the most effective methods for cooling a pot of fresh soup.
Bathe her
An ice bath will cool your soup pot very quickly. Within an hour, the boiling water will cool to room temperature, and it can be put into the refrigerator:
- Plug the drain in the kitchen sink and draw in ice cold water.
- Place a large, but low heat-resistant dish with the bottom up on the bottom. For example, a cake tin is perfect. This is to prevent the sink from being damaged by the hot pot.
- Place the pot on an overturned container.
- Stir the soup periodically for an hour to cool it down faster. Add ice to the sink whenever possible.
Divide it
Do you have enough clean dishes to hold all of your soup? Ok, let's use it:
- Pour the entire soup into small bowls, bowls, plastic containers.
- Arrange the dishes on the table. In this form, the soup will cool down three to four times faster.
- If you have a fan, place it in front of the crockery and turn it on. The flow of air will drive heat away from the soup, and it will cool down even faster.
- When steam stops flowing from plates and bowls, drain the soup back into the pot and refrigerate.
Once I managed to cool five liters of soup by pouring it into about 10 different vessels in 1.5 hours. I didn’t use the fan - I could probably handle it in an hour.
This trick works with any food - just place it on plates and it will cool down faster.
Put her out the door
Let's clarify - behind the balcony door. If you have a balcony or loggia and it is winter now, you can cool the pot of soup, so to speak, in the most natural way. Be sure to place something heat-resistant under the hot pot so as not to ruin the balcony floor. The cooling rate is very dependent on the temperature on your balcony / loggia. It is best if the temperature does not rise above +14 degrees.
Dilute it
This method should only be used if you are sure that the taste of the dish will not be affected by a little thinning. We will not dilute with water, but with ice cubes - this is more effective. Add 2-3 cubes for each liter of soup and stir well.
If you absolutely don't want to dilute the soup, try using reusable ice cubes. They will not spoil the taste, but they will help to cool the dish faster. Their disadvantage is that they cool less effectively than real ice. So you need to put them in twice as many.
Attach a bruise bag to it
If you have special cooling bags for bruises lying around, it's time to use them for other purposes:
- Prepare a cold bag according to its instructions. Usually they need to be kneaded to break the inner little bag.
- Place a saucepan on this bag.
- While stirring the soup, often lift the thick from the bottom to cool the dish more evenly.
Even if you do not have such a package, you can find it in any pharmacy, but it is inexpensive - about 50 rubles apiece
