A light snack will not require much time and special expenses from you. Since the roll is baked in the oven and not fried, it can be classified as a dietary meal.
You will need:
- 500 g zucchini;
- 4 eggs;
- 200 g of hard cheese;
- 200 grams of unsalted cream cheese;
- salt to taste.
Add pepper or your favorite spices if desired. The roll will be filled with cream cheese, if you mix it with chopped fresh herbs, it will be even tastier.
It is better to take young zucchini, then you do not have to peel them. Zucchini is great. Wash them thoroughly and grate on a medium grater. Salt a little, stir the mixture and let it stand for 20 minutes until the juice comes out. Drain it and squeeze the courgettes out a little.

In a separate bowl, beat the eggs until smooth, add them to the courgettes, add grated hard cheese, salt and season with spices. Mix all ingredients thoroughly.

- salt, pepper, dill - to taste;
- mayonnaise - to taste;
- vegetable oil for frying.
Of course, you can use not only champignons, but any other mushrooms as well. My family, for example, loves chanterelles and whites. The only thing I would advise on my own is to pre-boil them for just a few minutes before cooking further for the filling. Maybe this is paranoia, based on rumors about pesticides and other poisons in the soil, but in any case, mushrooms and oyster mushrooms grown in greenhouse conditions definitely do not contain harmful substances, so they do not need additional heat treatment.
Grate the courgettes, squeeze them out to remove excess moisture. Add onion, dill, grated on a coarse grater to them, beat in egg yolks, add flour and baking powder. Mix everything thoroughly.

Beat the egg whites until firm foam, gradually add to the dough, stirring all the time, preferably clockwise. Place the mixture on a baking sheet lined with parchment paper. Lightly grease the paper. Place in an oven preheated to 200 ° C for 30–35 minutes. When the crust is browned, remove the crust and let it cool.

In the meantime, prepare the filling. Fry the sliced mushrooms with onion until tender, add sour cream, salt and pepper at the end. The filling should also cool.
