Why is improperly cooked meat dangerous?

After cooking, red meat becomes a heavy food, burdens the liver and kidneys, so the passion of many gourmets for exquisite meat dishes that have not been exposed to heat is fully justified.
Now about the main risks. First of all, these are animal parasites, which can only be killed by heat treatment.
It is highly discouraged to use raw poultry, after which a new tenant will settle in your body with a 99.9% probability, and his name is Salmonella.
Of course, the game can only be served carefully cooked to avoid many parasites.
Under no circumstances should you eat raw pork, as you can pick up pork tapeworm. Unlike the bovine tapeworm, familiar to us from school biology, the pig is very dangerous: the larvae of this parasite get into the eyes, nose, brain, and are transmitted from person to person.
Herbivores, which include the cow, are considered the safest to eat without heat treatment. Of course, they could accidentally "catch" those same larvae, nibbling the grass in the "unfortunate" place.
But if the animal was carefully monitored, it was under the supervision of a veterinarian, and after slaughter, the meat was cut and stored properly, there is no reason for worry.
Do not purchase raw beef in markets, in unregulated places with no necessary storage conditions. Give preference to certified producers supplying vacuum packed meat to stores. Such a shell prevents the entry and reproduction of bacteria, and the product itself exactly meets quality standards and is regularly checked by specialists.
Overcooked meat
It would seem difficult to make a mistake when boiling meat, but this is also a common problem. The fact is that the main function of heat treatment is to get rid of all parasites and bacteria that may be contained in meat fibers. After a certain time, the high temperature makes the protein and part of the vitamins indigestible, that is, useless.
The optimal boiling time for a chicken carcass is one hour, for pieces - half an hour.
For a delicious and healthy soup, only place the chicken in cold water. With gradual heating, the juiciness and taste will pass into broth. If you put meat in boiling water, the top layer of proteins will instantly “seal”, the broth will be bland and tasteless.
It is not recommended to choose fragments with bone for soup - the bone marrow contained in them is a loading dose of cholesterol and calories.
It is important to keep the proportions: 1.5 liters of water per 1 kg of fillets. The more water, the less will be the concentration of flavor both in the meat and in the broth.
How long should the meat be cooked so that the food is tasty and healthy (based on 1 kg):
- fresh beef - 1.5 hours;
- defrosted beef - from 1.5 hours;
- lamb - up to 2 hours;
- pork - up to 2 hours;
- veal - from 1 hour.
Overcooked meat
The main criterion for a fried steak has always been considered a ruddy brown crust and the absence of ichor inside. Many are still guided by this principle and prefer well done roasted dishes.
Perhaps, it is worth radically reconsidering your tastes, because the results of the latest medical research have shown that the consumption of refried meat is dangerous by the by-substances formed during exposure to high temperatures. For example, glitoxins, which stimulate the development of inflammatory processes and some diseases. Their concentration is directly proportional to the duration of cooking.
