It is not recommended to choose fragments with bone for soup - the bone marrow contained in them is a loading dose of cholesterol and calories.

It is important to keep the proportions: 1.5 liters of water per 1 kg of fillets. The more water, the less will be the concentration of flavor both in the meat and in the broth.
