It would seem that there is nothing unusual here: grated raw potatoes, a little flour, an egg, salt and spices. But if you turn on your imagination and add additional ingredients, for example, minced meat, then you get a completely new original dish!

How to cook potato pancakes with minced meat: a step by step recipe

Such potato pancakes need to be made a little thicker than ordinary ones. Thanks to the minced meat, they will bake well from the inside and will be juicy.

Thanks to the minced potato pancakes, they are crispy on the outside and juicy on the inside.

You will need the following products:

  • 250 g minced meat;
  • 6 medium potatoes;
  • 4 eggs;
  • 1/2 onion;
  • vegetable oil for frying;
  • salt and pepper to taste.

You can add any condiments you like.

  1. Chop the onion as small as possible. Add it to the minced meat, beat in 1 egg, salt and pepper (or add your favorite seasonings). Stir the food thoroughly.

  2. On a coarse grater, grate the raw potatoes and rinse well in running water. If you have a very starchy potato variety, then rinse it for as long as possible: you need to wash out all the excess starch. After that, squeeze the grated potatoes with your hands and put in a colander.

  3. Salt the potatoes in a colander, add the remaining eggs. Let the juice drain out.

    Add salt and eggs to potatoes and wait for excess moisture to drain

  4. When excess moisture has drained, combine all foods in a colander until smooth. Heat vegetable oil in a skillet. Spread out the potato mixture little by little with a tablespoon, kneading into thin cakes. Put a small amount of minced meat on each of them and carefully distribute. Put the potato mass on top. Remember that each layer should not be too thick.

  5. Fry the pancakes for 3-4 minutes over medium heat, then turn over. Now put the lid on the skillet. Thanks to this, potato pancakes will be well extinguished from the inside, and will not burn on the outside.

Do you know why we needed to rinse the grated potatoes so thoroughly? Because the starch that it contains contributes to the rapid darkening of the potato mass due to interaction with oxygen. Not that it hurts the taste of potato pancakes, but the finished dish ultimately looks not rosy, but grayish. And I can say from my own experience: dough with a high starch content is very naughty, it sticks first to your hands, and then to the pan.
