Zucchini is a versatile product as it can be used to make appetizers, main courses, and even desserts. If you are tired of traditional caviar and pancakes, you can try unusual cooking options for this healthy vegetable.

Fried zucchini with shrimps and garlic

Garlic shrimps give the vegetable a special piquant taste. The dish turns out to be light, but at the same time very nutritious. You will need:

  • 2 young zucchini;
  • 12-15 large shrimps;
  • fresh basil and parsley;
  • 3 cloves of garlic;
  • 1 tbsp. dry white wine;
  • 4 tbsp. l. olive oil.

Wash vegetables, cut into half rings. Fry in hot olive oil, first a couple of garlic cloves (for one minute), and then the zucchini. Remove vegetables after frying.

Put chopped herbs, a clove of garlic, salt and pepper in a frying pan. Add the shrimp in the shell and fry for 3 minutes on each side.

Next, pour in the wine, cover the pan with a lid and simmer for 15 minutes over low heat. After that, remove the shrimp, cool, peel and send back. Put vegetables in the pan, cover and simmer for about 10 minutes.

Salted zucchini for the winter

Canned zucchini tastes as good as cucumbers. This recipe does not include sterilization. You will need:

  • 1.5 kg of zucchini;
  • 4 cloves of garlic;
  • a few sprigs of parsley;
  • 6 tbsp. l. table vinegar;
  • 3 st. l. salt and sugar;
  • 2-3 bay leaves;
  • 3-6 peppercorns.

Rinse the vegetables, cut into 1 cm thick circles, add water and leave for 2-3 hours. Arrange herbs, bay leaves, garlic and other spices in the jars. Place the vegetable preparations tightly, pour boiling water over the containers, cover the containers with lids, leave for 20 minutes.

After the time has passed, drain the water into a saucepan, add sugar and salt to it, bring to a boil, and then pour in the vinegar. Pour vegetables with the resulting brine, cork the jars.

You can make a tender and hearty pie from zucchini. Required Ingredients:

  • 2 young zucchini;
  • 4 eggs;
  • 1 onion;
  • 2 tsp Sahara;
  • 1.5 tbsp. flour;
  • 3 tsp baking powder;
  • 200 g smoked sausage;
  • 2-3 cloves of garlic;
  • fresh herbs.

Wash the vegetables, grate, salt and leave for 5-10 minutes, then squeeze the juice. Meanwhile, chop the onion, fry it in hot vegetable oil.

Mix the vegetable mass with eggs, onions and sugar. Mix thoroughly, gradually add sifted flour with baking powder. Stir again. Grind smoked sausage, herbs and garlic, add to the dough.

Grease a baking dish with vegetable oil, sprinkle with a little flour. Put the dough into a container. Put in the oven, bake for 20-25 minutes at 200 degrees.

Zucchini have a neutral taste, while they easily absorb the aroma of other products. If you add oranges to vegetables, you get a fragrant and healthy jam. You will need:

  • 600 g zucchini;
  • 2 oranges;
  • 1 lemon;
  • 0.5 kg of sugar.

Cut the peeled vegetables into cubes, put in a saucepan for jam. Wash the citrus fruits, remove the zest, chop and add to the zucchini. Put chopped orange and lemon pulp there, after removing the seeds and white film.

Cover the mixture with sugar, wait until the juice begins to stand out, and then cook the jam in two steps. At the first stage, bring the mass to a boil and cook over low heat for 6–8 minutes.

Then remove the pan from heat and let the jam brew for 3-4 hours. Then bring it to a boil again and cook for 20-30 minutes. After that, pack the jam into jars and close hermetically.

The vegetable can also be added to baked goods. Ingredients:

  • 2 small zucchini;
  • 1 tbsp. broth;
  • 3 tbsp. l. vegetable oil;
  • 1 tsp. salt and sugar;
  • 700 g flour;
  • 9 g dry yeast;
  • 1 tsp turmeric.

Wash the vegetables, cut into cubes and boil until soft. Pour the broth into a glass.

In a bowl, combine half the flour, yeast, sugar and salt. Add zucchini and vegetable oil, knead vegetables, mix thoroughly. Pour in the broth, add turmeric, and then gradually add the remaining flour to make a strong dough.

Grease a ball of dough with butter and leave for 1 hour under a napkin. Then knead the dough again and leave for another 1 hour.

Form a loaf and place on a baking sheet lined with paper. Make cuts on the loaf, grease with water, sprinkle with sesame seeds if desired. Send to an oven preheated to 190 degrees for 1 hour.
