Step-by-step pork stew recipes at home
Once, when I was still a little girl 7–8 years old, an unprecedented and fearsome machine appeared in the yard of our house. As it turned out, the parents decided to cook stew at home and for this they borrowed an autoclave for temporary use - a special device with which you can make delicious preparations from meat, fish and even vegetables. I remember that during the work of the iron monster (as it seemed to me then), my mother forbade anyone to come close to it, explaining that it was explosive … Then, on the kitchen table, rows of small glass jars with delicious pieces of meat filled with pork fat lined up. And what was the taste! It is impossible to describe in words. Over time, I tried many options for homemade stew, including cooked and without using an autoclave. I can't say that all the recipes came to my taste,but about ten ways to create canned meat took their pages in our family's culinary notebook. I share some of them.
Homemade pork stew with tomato sauce in an autoclave
The meat prepared according to this recipe turns out to be somewhat similar to pork kebab. I want to note right away that the number of components in the list below is designed for the preparation of 1 can of stew with a volume of 0.5 liters, therefore, proportionally increase their number depending on how many cans of preservation you want to get as a result.
Ingredients:
- 450 g of pork;
- 2-3 tbsp. l. tomato sauce;
- salt and black pepper to taste.
Preparation:

Wash and dry a piece of pork pulp.

Cut the meat into large, freeform pieces.

Transfer the pork to a large bowl, add salt and black pepper, stir everything.

Place the meat with additives in pre-sterilized jars, close with sterile lids and roll up.

- Place the jars in the autoclave and fill with water so that it covers the stew by 3 cm.
- Close the device, pump up the pressure to 1.2 atmospheres.
- Place the autoclave on fire, bring it to 120 degrees and cook the stew for 40 minutes.
- Turn off the device and leave it unopened until it cools completely.

In a few steps, release the pressure in the cooled autoclave, open it and remove the finished stew.

Homemade pork stew in a slow cooker
If you do not have an autoclave, do not rush to get upset and run to the store, since a wonderful pork stew can be prepared with the help of a popular kitchen assistant - a multicooker, which is popular in our time.
Ingredients:
- 2 kg boneless pork;
- 10 black peppercorns;
- 2 bay leaves;
- 1 tbsp. water;
- salt to taste.
Preparation:

Transfer the pork to the multicooker bowl, send the peppercorns, laurel leaves and salt there.

Simmer meat until tender
- Sterilize the jars and lids in any way convenient for you.

Homemade pork stew with peas on the stove
If you have not yet acquired a multicooker, feel free to try to make a stew using a regular pan. The taste and aroma of this dish are in no way inferior to the above-described options for canned meat.
Ingredients:
- 250 g pork;
- 100 g dry peas;
- 120 g fresh lard;
- 1/4 onion;
- 5 black peppercorns;
- salt and black pepper to taste.
Preparation:

Cut the lean pork into medium-sized pieces.
