Eager to make potato pancakes, I spent a lot of time trying to find the right recipe. Numerous culinary sites offer a wide variety of recipes, claiming that their recipe is the classic one. However, it is not. I have known a girl from Belarus for a long time, who has repeatedly told me that real potato pancakes are prepared only from potatoes with salt and are fried in pork fat. Therefore, all recipes where you see chicken eggs, flour, onions, herbs and other additives in the list of ingredients are variations of the main recipe.
Classic recipe
The secret of classic Belarusian potato pancakes lies in potatoes. Root crops grown on fertile lands are tasty, aromatic and healthy. For the preparation of neat pancakes that do not disintegrate when frying, it is recommended to use potato varieties with a high starch content (Istrinsky, Vestnik, Belousovsky, Orbita and others).
Ingredients:
- 6 potatoes;
- salt;
- pork fat for frying.

With minced meat
As I said above, the classic recipe for potato pancakes has a huge number of variations. To make the dish more tasty and satisfying, many hostesses add minced meat or poultry to it.
Ingredients:
- 1 kg of potatoes;
- 300 g minced chicken;
- 2 onions;
- ground black pepper - to taste;
- salt to taste;
- sunflower oil for frying.
Preparation:

Peel the onion. Chop one onion in a blender until puree, the second - cut into thin half rings.
To obtain onion puree, grate the vegetable, chop in a blender or pass through a meat grinder

Mix the minced chicken with half the onion gruel, salt and black pepper to taste.
