  1. The main component of homemade condensed milk is milk. It should be not only fresh (otherwise it will simply curdle when heated), but also whole, with a high percentage of fat, without any additives. It is recommended to take homemade milk, preferably fresh. If you do not have the opportunity to buy such a product, opt for store-bought pasteurized milk with 3.5% fat content.

  2. Often, cream is used in the preparation of homemade condensed milk. They can completely replace milk or take both products in equal proportions. The fat content of drinking cream for condensed milk must be at least 25%.

  3. Sugar is the second most important ingredient. It should be dry, crumbly, without lumps. Most often, sugar is pre-ground into powder - this way it dissolves faster during cooking and improves the consistency of the finished product. Sometimes a little starch is mixed with the powder to make the condensed milk thicker. If you replace white sugar with cane sugar, the finished product will be sweeter.

It seems that condensed milk takes a long time to cook. But in fact, it will take you only 15 minutes, and at the exit you will get that very tasty condensed milk from childhood, which will be much cheaper than the store one, and certainly more natural.

At home, you will make condensed milk from quality natural products

You will need:

  • 200 g whole milk;
  • 200 g icing sugar;
  • 20 g butter.

Remember: 15 minutes is not some kind of trick, but the exact time during which you need to cook condensed milk. Keep it on fire a little longer - the next day it will crystallize; cook less - it will harden badly. If you use sugar instead of powder, the condensed milk will turn out to be liquid. All this was revealed by me personally by trial and error.

  1. Take a saucepan, pour milk into it, add powdered sugar and add a piece of softened butter. Mix everything thoroughly.

  2. Place the saucepan with the contents on low heat. Cook, stirring all the time, until the powder and oil are completely dissolved. At the beginning of boiling, a foam will appear on the surface of the mixture.

  3. Increase heat to medium intensity and continue cooking. Stir the mixture constantly as it will foam well. If the mass tries to "escape" from the pan, lower the heat.

  4. From the moment it boils, cook the mixture for exactly 10 minutes. During this time, the condensed milk will foam well.

  5. Remove the pan from heat and immediately place in a large container filled with cold water. So far, the condensed milk will be liquid, but, as it cools, it will become much thicker.
  6. Pour the warm condensed milk into a dry clean jar and close the lid. Store the product in the refrigerator.

How to cook condensed milk in 15 minutes with drinking cream

In much the same way as described above, you can prepare condensed milk with the addition of drinking cream. There is no need to add oil: cream will perfectly replace it.

The ratio of the amount of cream and sugar should be 1: 1. You can take cream in half with milk (the proportion will be 1 part cream: 1 part milk: 2 parts sugar), but in this case, you must grind the sugar into powder and add starch to it.

If you hang in grams, you have two options, for example:

  • 300 g cream and 300 g sugar;
  • 150 g cream, 150 g milk, 250 g icing sugar, 50 g starch.

Simply combine all the ingredients in a saucepan and stir. Put the saucepan on the fire and bring the contents to a boil, then cook for 10-15 minutes, stirring all the time, until the condensed milk reaches the required consistency.

The cooking time directly depends on the fat content of the cream. The fatter they are, the less minutes it will take. Just pay attention to how thick the condensed milk is. In addition, 10 minutes after boiling, the fire must be tightened to a minimum: the condensed milk should slowly thicken, warming up, and not burn.

If you have a multicooker at your disposal, you can see from your own experience how well it copes with the preparation of condensed milk. But here it is very important to know how to choose the right mode on the device.

You will need:

  • 1 tbsp. (250 ml) sugar;
  • 1 tbsp. dry whole milk;
  • 1 tbsp. fresh milk.

Please note that milk powder must be whole. Milk substitute is absolutely not suitable, otherwise the condensed milk will be spoiled. In addition, it is better to take fresh milk from home, or, in extreme cases, store milk with a fat content of at least 3.2%.

  1. Combine sugar and milk powder in a deep bowl. Mix thoroughly until smooth. Pour milk into the mixture and beat well with a whisk so that there are no lumps left.
  2. Pour the resulting mixture into the multicooker bowl. Set the "Soup" mode and, without covering, bring to a boil. Remember to stir the mixture constantly so that it does not burn.
  3. As soon as the boiling process has begun, switch the device mode to "Baking" and set the time to 15 minutes. When the condensed milk is ready, let it cool, then pour it into jars for storage or serve immediately with tea.

If the finished condensed milk does not seem thick enough to you, boil it for another 5 minutes. You can even make it look like caramel; this will take 25-30 minutes of cooking.

If you want the condensed milk to acquire a caramel taste and color, cook it a little longer

And also try to beat the finished condensed milk in a blender for about 1-2 minutes. From this it will become even softer and more airy.
