If you love hearty and delicious breakfasts, but do not want or do not have the opportunity to spend a lot of time preparing your morning meal, your culinary notebook should definitely have a separate section dedicated to quick dishes to start a fruitful day. Of course, regular scrambled eggs, sandwiches or oatmeal with additives are always popular, but there are tons of other recipes with which you can please yourself and your loved ones with a great lazy breakfast prepared quickly and easily.

I will say right away that I am not a fan of breakfast. In most cases, my body wakes up for a very long time and in the first 2-3 hours after waking up, nothing but strong coffee requires. Although there are exceptions, when the morning getting out of bed is accompanied by a sudden feeling of hunger. But all my family members love to have breakfast. I won't say that I arrange delicious mini-holidays for them every morning, but I still try to add variety to the menu and often cook something new and unusual in the morning. I will share the recipes for several such dishes below.

Crispy croutons with potatoes

Toasted pieces of bread are a frequent visitor to the morning table, but today I suggest you prepare croutons in a new way - with the addition of hearty potatoes and fragrant fresh herbs.

Ingredients:

  • 1 sliced loaf;
  • 2-3 potatoes;
  • 1 head of onion;
  • 2 eggs;
  • 1 bunch of dill;
  • salt and black pepper - to taste;
  • vegetable oil for frying.

Preparation:

  1. Grate the peeled potatoes on a coarse grater together with the onions, mix. Both products must be mixed immediately, otherwise the potatoes will acquire an unappetizing dark color.

  2. Rinse the dill, dry and chop finely with a knife.

  3. Pour the greens into a bowl with potato and onion mass, beat in the eggs, add salt and black pepper. Mix all ingredients thoroughly again.

  4. Using a large spoon, spread the vegetable mixture onto a piece of loaf and press with a spoon. The filling should cover the bread by about 1.5 cm.
  5. Repeat the same steps with the bread and filling, placing the blanks in a pan with heated vegetable oil so that the filling is at the bottom.

  6. When the potatoes are soft and browned, turn the filling upside down and continue cooking for another 1-2 minutes.

  7. Put the prepared croutons on a dish and serve hot or warm with ketchup or any sauce of your choice.

Quick breakfast of pita bread with sausage, cheese and tomatoes

More recently, I wrote that you can cook many wonderful dishes from thin Armenian lavash. So this product can serve as an excellent basis for a hearty and original breakfast.

Ingredients:

  • 1 sheet of Armenian lavash;
  • 100 g of hard cheese;
  • 100 g of boiled sausage;
  • 1 tomato;
  • 2 eggs;
  • salt and black pepper;
  • sesame seeds;
  • 10 g butter.

Preparation:

  1. Grate a piece of hard grater with large holes, cut the sausage and tomatoes into small cubes.

  2. Fold a sheet of pita bread in half, and then, using a pan or plate as a shape, cut it in a circle so that you get 2 round blanks.

  3. Grease a skillet with butter and transfer one piece to it. Spread half of the grated cheese over the surface of the pita bread and cover it with slightly beaten (mixed) eggs. Leave a couple of tablespoons of the egg mixture to grease the cake.

  4. Put sausage and tomatoes on the eggs in an even layer, season with salt and pepper, sprinkle with the remaining cheese.

    Put all other filling ingredients in the pan.

  5. Cover the piece with a second round piece of pita bread and lightly press down with your hands. Brush the flatbread with the egg mixture and sprinkle with sesame seeds, adjusting the amount to suit your taste. Cook over medium heat, covered, for 5 minutes.
  6. Gently lift the filled pita bread with a spatula and turn over to the other side, continue to fry for another 4-5 minutes.

    Cook the flatbread on both sides for 5 minutes

  7. Cover the pan with a large cutting board or flat plate, and turn over.
  8. Cut the tortilla into portions.

Borodino omelet

  • 150 g of Borodino bread;
  • 1 zucchini;
  • 1 bell pepper;
  • 1 tomato;
  • 3 eggs;

  • salt.

Preparation:

  1. Cut the tomato, remove the seeds and liquid from the seed pods. Cut the tomato, zucchini and bell pepper (without seeds and stalks) into strips 5-7 mm thick.

  2. Melt butter in a frying pan, add olive oil, stir. Put the vegetables prepared earlier in the mixture of oils, cover and simmer over low heat for 10 minutes.
  3. Put the Borodino bread and hard cheese, also cut into strips, in a pan with vegetables, cover everything with mixed eggs, lightly salt.

  4. Cover the skillet and fry the omelet for 7-8 minutes until the eggs are done.
  5. Put the finished omelet on plates, garnish with grated cheese and fresh herbs.
