- 10 g gelatin;
- 120 ml of water.
To roll the finished marshmallows, you will also need a tablespoon of powdered sugar and starch.
The cooking process takes 20 minutes. A high speed hand mixer is required. Making marshmallows is easy.

First, you need to soak the gelatin in 60 ml of warm water. Stir well and leave to swell. Put the swollen gelatin in a deep bowl and heat in a water bath until it becomes liquid. It cannot be heated too much.

At this time, you need to cook the syrup from the sugar and the remaining water. Add lemon juice if desired. Cook over low heat until boiling. The sugar should be completely dissolved.

Begin whisking the gelatin at low speed. Pour the hot syrup over the edge of the bowl, whisking gently. Then increase the speed. Beat the mixture until it turns white and fluffy. It will increase in volume. Add vanillin and color at this stage if desired.

Moisten a deep baking sheet with water and line with cling film, leave a piece on one side to cover the baking sheet on top. Brush the film with odorless vegetable oil. Put the prepared mass immediately on a baking sheet, level. Cover the top with the end of the film. Refrigerate overnight.

An interesting dessert will turn out if you cut marshmallows with molds. You can also spread the mass through a pastry bag in the form of strips or round cookies. It is convenient to cut the strips with sharp scissors.
If you want to get a ready-made dessert faster, you can put it in an oven heated to 110 ° C for half an hour. Only in this case, replace the film with parchment paper.
