Despite the fact that my working days often end 1โ2 days before the end of the current year, the feeling of a holiday, the expectation of something new and good, as well as the opportunity to mentally sit with loved ones, set me up in a positive mood and activate my culinary fantasy. Every New Year's table I decorate with at least two salads, which I have never prepared or offered to guests and family before.
Festive salad with seaweed and crab sticks
The photos of the dishes that you will see below demonstrate how you can arrange a salad for Christmas. For a New Year's Eve feast, I recommend simply replacing the cheese candles with a scattering of canned corn and / or pomegranates, cheese stars or other edible elements of New Year's decor.
Ingredients:
- 400 g crab sticks;
- 120 g of seaweed;
- 100 g of boiled rice;
- 200 g canned corn;
- 3 boiled eggs;
- 3 tbsp. l. mayonnaise;
- 1 large bunch of fresh dill
- 1 tsp cumin seeds;
- 3 slices of processed cheese;
- salt to taste.
Preparation:
- Boil rice until tender.
- Throw the corn in a colander.

Gently peel off the top red layer from one crab stick, set aside. Cut the remaining part and all other sticks into small cubes.
The tops of a few crab sticks will be needed later to decorate the salad

Grate the eggs on a medium grater.
Eggs can be grated on the side with medium or large holes

Place all ingredients and seaweed in a large bowl.
Fold food into a large container to easily mix the salad later.

Season the salad with mayonnaise. Try it, add salt.

An amazing combination of products that pleases the eye and taste buds.
Ingredients:
- 200 g chicken liver;
- 1 mandarin;
- 1 bunch of lettuce leaves;
- 100 g cherry tomatoes;
- 70 g of pitted olives;
- 2 tbsp. l. lemon juice;
- 5 tbsp. l. olive oil;
- 2 tbsp. l. soy sauce;
- 3 tbsp. l. wheat flour;
- 1/2 tsp cumin;
- salt and black pepper to taste.
Preparation:
- Peel the tangerine slices from the film, cut into 2-3 pieces.
- Cut the cherry into halves.

Wash and peel the liver, cut in half, roll in flour or finely ground bread crumbs.
Liver can be breaded in flour or breadcrumbs

Heat in 3 tbsp. l. olive oil and fry the liver for 2-3 minutes on each side. Season with salt and pepper to taste.
Do not fry the liver for longer than the specified time, otherwise it will lose its flavor and nutritional properties.

Tear the lettuce leaves with your hands into medium-sized pieces and transfer to a plate.

Exotic salad with shrimps, ginger and grapefruit
A delightful dish that will add a refreshing touch of exoticism to the magic of New Year's Eve and fill your home with tropical flavors.
Ingredients:
- 1 pineapple;
- 1 grapefruit;
- 220-250 g of peeled small shrimps;
- 100-120 g seedless green grapes;
- 1 slice of ginger;
- 3 tbsp. l. olive oil;
- 1 lime;
- 1/2 tsp granulated sugar;
- 1/4 tsp salt;
- 1/4 tsp ground white pepper;
- fresh mint for decoration.
Preparation:

Prepare food. The above amount of ingredients is based on one pineapple half. If you want to make a salad in two halves, double that amount.

Cut the pineapple in half lengthwise.

Use a knife to carefully remove the central hard core and pulp.

- Part of the pulp, about 300 g, cut into cubes and transfer to a plate. Put the remaining pulp and the other half of the pineapple in the refrigerator for later use in other dishes.
- Boil the shrimps for 1 minute in slightly salted water, cool.

- Combine the ginger and lime juice, olive oil, salt, pepper and sugar.
- Put the remaining grape and grapefruit slices on the salad, pour the dressing over the dish and refrigerate for 1-2 hours.

Daikon salad with walnuts and cheese
A very interesting dish that gives you the opportunity to enjoy a spicy, but at the same time delicate taste. Despite the simple composition, the salad turns out to be very tasty and unusual.
Ingredients:
- 400 g daikon;
- 100 g of boiled chicken meat;
- 150 g of hard cheese;
- 5-6 walnuts;
- mayonnaise - to taste;
- greens for decoration.

Peel the daikon, rinse, dry, grate on a coarse grater and transfer to a bowl.
