A step-by-step recipe for cutlets with black bread, as in Soviet canteens
Despite the fact that the school years are far behind me, I remember very well our cafeteria, the aromas of which prevented me from concentrating on the lessons and made me wait for the call with special impatience. The dish that disappeared from the huge pallets in the first place was always ruddy cutlets in bread crumbs.
Ingredients:
- 500 g mixed minced meat;
- 3 heads of onions;
- 2 cloves of garlic;
- 300 g of black bread;
- 100 ml of water
- 1 egg;
- 3-4 st. l. bread crumbs;
- salt and black pepper - to taste;
- vegetable oil for frying.

For delicious cutlets, you need a very simple set of products.
- Crumble the bread and crusts with your hands and place in a large bowl.

Pour water over the bread, stir and leave for 10-15 minutes.
Soak bread in water or milk
- Chop the onion with a meat grinder or blender.

Transfer the minced meat, onion, garlic through a press, add salt and black pepper into a bowl with bread.
Combine bread with minced meat, chopped vegetables and spices

Beat the egg into the minced meat and knead until smooth.
Mix the minced meat thoroughly
- In a large skillet, pour 4-5 tbsp. l. vegetable oil, heat it well.

Form cutlets from the minced meat with wet hands, roll in breadcrumbs.
