DIY French pie: cooking a classic quiche lauren
It is not for nothing that the French are considered experts in love affairs, because they even treat food with special inspiration and tenderness. To be convinced of this, it is enough to try a piece of quiche, which melts in your mouth - an open pie made from chopped dough with various fillings. Today we will talk about the variety of such baked goods and get acquainted with the recipe for quiche lauren.
Step-by-step recipe for the classic quiche lauren
Open tarts are one of my weaknesses, among which the classic French pie stuffed with smoked brisket and cheese is a favorite. I love the simplicity of the quiche and the fact that you can experiment with the filling. For example, sometimes I replace the brisket with smoked chicken or bacon (whichever is in the fridge), and I also use different types of cheese and add spices to my taste.
Ingredients:
- 170 g wheat flour;
- 100 g of chilled butter;
- 2 tbsp. l. cold water;
- 3-5 eggs + 1 yolk;
- 120 ml of milk;
- 120 ml of cream, 33–35% fat;
- 150 g smoked brisket or bacon;
- 150 g of hard cheese;
- 1 head of onion;
- 1 pinch of nutmeg
- salt and black pepper - to taste;
- vegetable oil for frying ingredients;
- beans for baking basics.
Preparation:
- Sift flour and salt into a large container.

Cut the chilled (but not frozen!) Butter into small cubes or grate on a grater with large holes, put in a bowl of flour and rub with your hands until you get crumbs.

In a separate container, combine 1 egg yolk and water.
Mix egg yolk with cold water
- Pour the egg mixture into the butter and flour crumbs, stir, knead the dough that does not stick to your hands and roll it into a ball.
- Roll out the dough into a circle, the diameter of which should be larger than the diameter of the bottom of the baking pan.

Pour the dough into the mold, forming the sides. Puncture the crust with a fork, cover with a sheet of baking paper and refrigerate for 20 minutes.
Transfer the rolled dough to a baking dish
- Preheat the oven to 190 degrees.

Finely chop the onions with a knife, cut the smoked brisket into thin strips. Transfer both foods to a skillet with a little vegetable oil (about 1 tablespoon) and fry until golden brown.
Fry the onion and brisket until tender
- Grate hard cheese on a coarse grater.

Combine milk with eggs and cream. Season the dressing with ground nutmeg, black pepper and salt to your liking.
Prepare the pie filling

Take out the dough pan, fill it with dry beans or peas, place in the hot oven and bake for 20 minutes.
To prevent the base of the cake from deforming during the baking process, add dry beans to it
- Remove the baking paper and dry the base of the pie in the oven for another 5 minutes.
- Remove the finished crust, turn the oven temperature control 160 degrees.
- Put half of the grated cheese and the bacon and onion filling into the slightly cooled dough piece.

Pour the cream filling into the blank and sprinkle the quiche with the remaining grated cheese.

Bake the cake for 30-40 minutes until a delicious crust appears.

Cool the pie to room temperature and serve whole or in portions.
