A tasty product is prepared for future use in various ways, each of which finds its own admirers. In addition to the well-known dry salting, probably to everyone, there is also a method of preparing snacks using water. And today we will talk about how to salt wonderful bacon in cold brine.

Step-by-step recipe for salting lard in cold brine

During my student years, I had the opportunity to change housing several times. I no longer remember the reasons, but it doesn't matter. In one of the difficult intervals between leaving one apartment and finding another, I had to live with a classmate for some time. The girl and her whole family were Ukrainians, and therefore the bacon in their house was not translated. It was at that time that I got acquainted with the wonderful taste of an appetizer cooked in cold brine. To say that I liked her is to say nothing. It was the best lard I've tasted before and after. The mother of a classmate salted the product in large glass jars or just in a saucepan. I have adopted this experience and often prepare food myself.

Ingredients:

  • 1 kg of lard;
  • 100 g of salt;
  • 1 liter of water;
  • 2 heads of garlic;
  • 2 tbsp. l. spices to taste.

Preparation:

  1. Prepare all ingredients.

  2. Cut the peeled cloves of one head of garlic into thin slices.

  3. Pour the water into a saucepan, bring to a boil. Turn off the stove, add salt and prepared garlic, and let the pot cool completely.

    Prepare the brine

  4. Cut the bacon into strips or cubes about 4 cm thick, transfer to a saucepan with brine.

  5. Cover the bacon with a plate, place the load on top.

  6. Put the workpiece in the refrigerator and incubate for 3 days.
  7. After the specified period, remove the bacon from the brine, put it on paper towels and blot the remaining liquid.

  8. Peel the second head of garlic, pass through a press.
  9. Cut a piece of cling film, spread on the table.
  10. Spread the chopped garlic and your favorite spices evenly over the film.

  11. Wrap the lard in plastic wrap so that the garlic and spices cover all sides of the block.

  12. Place the bacon in the freezer for 2-3 hours, then remove and cut into thin slices.

  13. Serve lard as an addition to your favorite meals or as a snack with a glass of vodka.

The product is immersed in boiling water, cooked for several minutes, and then rubbed with spices and kept in the cold.
