During my youth, or rather, even my teenage years, I worked part-time as a waitress in a cafe-restaurant. A frequent visitor to the establishment was a woman, an acquaintance of the owner, who always asked for something that was not on our menu. Given the friendly relationship, the owner never refused her, especially since our chefs always had food for the dishes desired by the client. More often than other dishes, the woman asked to cook her a salad of boiled beets with prunes and chicken breast. I have always wondered what could be so delicious in a combination of these products, but one day curiosity got the better of it, and I decided to conduct an experiment at home. No sooner said than done. The salad was prepared easily and quickly (I bought the beets ready-made, boiled), and disappeared from the plate even faster, as my classmates who lived in the same room with me helped. A few months later, I tried to make a similar salad without beets, but with mushrooms and walnuts. And the result pleased me again. To date, I have in stock more than ten interesting options for salad with chicken and prunes, each of which is good in its own way and I recommend it. I share some recipes below.

Ingredients:

  • 1 large chicken leg;
  • 100 g of prunes;
  • 70 g of walnut kernels;
  • 2-3 eggs;
  • 2-3 tbsp. l. mayonnaise;
  • 1 clove of garlic;
  • salt and black pepper - to taste;
  • vegetable oil;
  • fresh herbs for decoration.

Preparation:

  1. Boil a large leg weighing about 400 g in salted water until tender, cool. Separate the meat from the skin, cartilage and bones, cut into small cubes.

  2. Beat eggs with a little salt.

  3. Pour the egg mixture into a skillet with a little hot sunflower oil and spread evenly over the entire surface. Turn the browned pancake over and fry until golden on the other side. Allow the product to cool, then cut it into squares.

  4. Cut the washed and dried pitted prunes into small pieces of any shape.

  1. Place the prunes in a small container, pour boiling water over and leave for 10-15 minutes. Throw swollen dried fruits on a sieve, dry, cut each lengthwise into 4-6 parts.

  3. Peel the boiled egg, divide it into white and yolk. Grate the protein on a coarse grater or cut into strips, also grate the yolk, but use the side of the grater with the smallest holes.
  4. Put the food in a small salad bowl, observing the following sequence: chicken meat, prunes, 1/2 mayonnaise, egg white, grated hard cheese, remaining mayonnaise.

Ingredients:

  • 250 g boiled chicken fillet;
  • 250 g of champignons;
  • 10 prunes;
  • 1 head of onion;
  • 1/2 tbsp. walnut kernels;
  • 200 g of boiled potatoes;
