Amber quince jam: a time-tested recipe
Fragrant quince fruits look very appetizing, but raw this fruit is practically not eaten. Juicy gifts of nature are used to prepare sauces for meat, drinks, marmalade, jelly and, of course, jams. A properly prepared quince treat for the winter is tasty, healthy and very beautiful.
Step by step recipe for quince jam
Now I don't even remember what recipe I used to make my first quince jam in my life. But I write about this experience with a smile. Either I was wrong in the proportions, or I used the wrong information, but the treat I cooked looked like a piece of soft plastic. The jam turned out to be delicious, but in order to eat a spoonful of the blank, it had to be picked out with a fork. Later I learned that you need to strictly adhere to the amount of ingredients and the time specified in a specific recipe for sweetness.
Ingredients:
- 5 kg of quince;
- 6 kg of sugar;
- 2 liters of water.
Preparation:

Wash and dry the quince.
Choose well-ripened quince fruits for jam
- Peel the fruit, cut into halves, remove the cores.

Transfer the peel to a saucepan, cover with water, put on fire.
The rind is the most aromatic part of the quince fruit.

Cut the quince halves into slices 10-15 mm wide.
Cut the quince into neat slices of equal thickness

Place the quince in a bowl.
Sliced quince darkens quickly, but this does not affect the taste and appearance of the workpiece.
- When the water in the saucepan is boiling, reduce the heat and simmer the rind for 5 minutes.
- Use a slotted spoon to remove the rind from the liquid.
- Pour sugar into a saucepan with water, stir, bring the syrup to a boil.

Transfer the quince to a saucepan and cook the jam over low heat for 10-15 minutes.
So that the jam warms up evenly and does not burn, stir the fruit mass from time to time during cooking
- Turn off the heat, cover the pan, leave the jam for 5 hours.
- After the specified time has elapsed, boil the quince mass again for 5 minutes, remove it from the stove and let it brew for another 5 hours.
- Heat the jam one last time and boil for 5 minutes.

Place some syrup on a saucer. The drop should keep its shape.
The syrup should be thick and stringy.
- Spread the jam in sterile jars, close with sterilized lids and seal tightly.
- Turn the cans upside down, wrap them up with a blanket, leave to cool completely.

Move the blanks to the cellar.
