One of them, Anastas Bogomilov, tired of damage to property in his tavern, decided to offer his clients a dish that would remind them of the world. Its ingredients, as conceived by the creator, had symbolic meaning: herring personified the proletariat, potatoes, carrots and onions - the peasantry, beets - the red revolutionary banner, and mayonnaise served as a reminder of the bourgeois revolution in France.
Bogomilov's chef managed to successfully translate the idea into a dish presented to visitors exactly in 1919. It was highly appreciated and was named "SHUBA", where the letters are abbreviations and are deciphered as follows: "To chauvinism and decline - boycott and anathema."
