It is especially important that dishes, even dessert ones, should be light and at the same time satisfying, so that you can have a delicious summer-style dinner on a warm evening after a hot day without burdening your stomach. Puff pastry rhubarb pie is a great treat for the whole family and your friends in the country.

Prepared dough recipe

The easiest way to make such a pie is to buy ready-made puff yeast dough in the store. In total, it will take you about 40 minutes from the start of cooking to full readiness.

For 6 servings you will need the following ingredients:

  • 500 g of puff yeast dough;
  • 300 g rhubarb;
  • 3 tablespoons of pitch sugar;
  • 1 tablespoon potato starch
  • 0.5 cups of water;
  • 1 chicken egg;
  • sesame seeds to taste.

Rhubarb appears in early spring and is ready to eat as soon as its stems are firm and firm. The filling from this plant is very delicate, with a pleasant sourness. Needless to say, how many vitamins and minerals are contained in rhubarb?

Peel the rhubarb stalks thoroughly for the filling

Take 5-7 thicker rhubarb leaf stalks, peel them of fibers. Cut them into small pieces, put them in a clean, dry skillet, add sugar, mix thoroughly and start heating. When heated and stirred, the rhubarb will release juice, which will be enough to prevent the mass from burning. After a couple of minutes, the petioles will soften and take on a golden-green color. You can remove the pan from the heat.

Now dissolve the starch in cold water and pour it into the rhubarb pan, stirring constantly. The filling will thicken, which means that it is already completely ready.

Take a sheet of puff pastry and roll it to fit a baking sheet or baking dish. In this case, you do not need to lubricate the mold with oil. Leave some allowances for the sides. Distribute the filling over the dough so that there is not too much of it: the dough should be baked and not damp.

From another sheet of puff pastry, cut into strips and cover the filling with them, like a wire rack. Brush the surface with a beaten egg and sprinkle with sesame seeds.

Instead of sesame seeds, you can use anise seeds, fennel, poppy seeds, cinnamon, and any other spices you like. As a last resort, simply sprinkle the cake with icing sugar.

You need to bake the cake in an oven preheated to 200 degrees for about half an hour, until the surface turns golden.

Cooking the cake completely: the secrets of puff pastry

If you like baking, then you probably don't want to work with ready-made dough from the store, but prefer to make your own. This means that our advice will be useful to you.

The so-called "American Pie" with filling will take your time and patience, but it will be worth it! The dough for such a cake is made from flour, ice water (this is important!), Sugar, butter and salt. Baking powder is not added to the dough, but it already acquires a layered structure. This effect is achieved thanks to the unmixed pieces of butter, which are melted during baking.

When kneading the dough, you do not need to try to make a homogeneous mass. Very cold water will help you with this, thanks to which the butter does not melt ahead of time, but remains in small pieces in the dough. You need to use such a dough as quickly as possible, and while you are preparing the filling, put it in the refrigerator.

So, for a cake with a diameter of about 30 cm you will need:

  • 170 g butter;
  • 300 g flour;
  • 3 tablespoons (heaped full) of sugar;
  • 2/3 teaspoon salt
  • 150 ml of ice water;
  • 600 grams of rhubarb for the filling;
  • 3 tablespoons of sugar for the filling.

Wash and peel the rhubarb and cut into small pieces. Add sugar, stir and leave for 15-20 minutes.

The best decoration for such a cake is a lid in the form of a lattice.

Prepare the dough. Dice the chilled butter, add sugar and salt. Add flour. Stir so that the dough is not smooth and there are pieces of butter in it. Add water and stir until the dough forms into a ball.

Separate ¼ part of the dough from the total mass. Grease a baking dish with butter, put most of the dough on the bottom of the baking dish, forming sides.

Pour the rhubarb filling, let the juice out, onto the dough in a mold, distribute evenly. Roll out the rest of the dough, cut into strips, form a wire rack on the pie. Cut off the excess dough carefully.

Preheat the oven to 220 degrees, put the pie in it and bake for 10 minutes. Then reduce the temperature to 180 degrees and bake for 30-40 minutes until tender.

After the cake is ready, let it rest for a while and cool.

And again the finished dough: a couple of interesting ideas

And here are two more recipes that are slightly different from the traditional pie preparation. In the first recipe, the peculiarity is in baking the dough. You will need:

250 g margarine or butter;

2 cups wheat flour;

2 eggs;

¼ tsp salt;

2 tbsp milk or water;

300 g rhubarb;

¾ glasses of granulated sugar;

¼ tsp cinnamon;

1 egg for lubrication.

Knead the dough as in the previous recipes. Separate 1/3 part, roll the rest of the dough into a layer about 8 mm thick. Put it on a baking sheet, make several punctures with a knife, bake at 240 degrees for about 20 minutes, until not completely cooked.

Put rhubarb on the baked crust, sprinkle with sugar and cinnamon. Roll out the remaining piece of dough, cover the bottom layer with the filling with it. Brush the surface with an egg and bake for about half an hour at 230 degrees.

Ready-made puff pastry from the store will be a good help in baking

The following recipe is interesting for its special filling. For the rhubarb puff, you need 6

  • 250 g puff yeast-free dough;
  • 4 thick stems of rhubarb;
  • 2 eggs;
  • 100 grams of sour cream 24% fat;
  • 5 tbsp Sahara;
  • vanillin to taste.

Cut the rhubarb and pour over with boiling water. Roll out the dough, put on a baking sheet with a rim.

Mix eggs, sugar and sour cream, add vanillin, pour rhubarb with this mass. Stir and pour over the dough layer in the baking sheet. Preheat the oven to 200 degrees, bake the pie for 20 minutes. Get it out when it turns red.
