A bit of the history of Spanish sweets

It is not possible to name the exact time and place of the appearance of the turron with absolute accuracy. According to scientists, based on the ancient treatise of an Arab doctor, the delicacy existed on the Arabian Peninsula as early as the 11th century. Turron really looks like oriental sweets, so it can be assumed that it was from there that the recipe for the treat appeared, which later spread on the Mediterranean coast.

Having appeared several centuries ago, Turron still finds millions of admirers around the world.

The mention of a sweetness, very reminiscent of the one that we can enjoy now, is also found in the historical monuments of Ancient Rome, dating back to the 15th century. At the same time, Turron is already known in the Spanish city of Gijona (province of Alicante). In his Christmas book, King Philip II's chef describes how “every house smells of Gijona honey,” meaning everyone is preparing a turron for the holiday. There is an amazing legend that the Spanish king married a beautiful Scandinavian princess. The girl longed for the snowy expanses of her homeland, and then the ruler ordered the servants to plant many almond trees throughout the territory of his kingdom. What for? The snow-white petals of a withering almond lay on the ground, creating the illusion of a blanket of snow that the king's beloved so missed. The princess's yearning receded, and the locals gathered generous harvests of nuts and figured out how to use it. It was then, among many recipes, that the aromatic turron appeared.

Currently, the turron is widespread in Spain and Italy, the Czech Republic, partially in France, as well as in Latin America. However, Spain is the leading producer of the treat. An attempt by two French firms to produce a sweet called gijona - the most famous Spanish turron - ended in court proceedings and the Spanish won.

Turron and its varieties

The oldest printed turron recipe can be found in a 16th century Spanish book, A Guide for Women: “For one pound of honey and nuts, take an egg white that has been beaten well before and stir the ingredients. Whisk for a long time what you get, and then leave it for a day. The next day you need to heat the mixture, cook until tender. It is necessary to interfere without interruption. At the end, readiness must be checked as follows: pour a drop of the mixture, which is still being cooked into a bowl with cooled water, and if after this drop has cooled down, the product can be broken, the cooking must be finished. To do this, remove the mixture from the stove, pour it into molds and cut it into pieces."

Speaking about the varieties of turron, first of all it should be noted that this product can be classified according to the degree of hardness: hard turron (Spanish Turrón Duro) and soft turron (Spanish Turrón Blando). In the second case, butter or cream is present among the ingredients, which makes the delicacy look like plasticine.

If initially the recipe for treats included only such ingredients as nuts, honey and egg white, then over time this list became more and more extensive. Skillful pastry chefs never stopped experimenting, so nowadays there is an opportunity to enjoy dozens of different tastes of this delicacy. Among the most popular are the following:

  • classic nut turron;
  • chocolate;
  • turron based on egg yolk (Turrón de Yema).

Thanks to the widest assortment, Turron finds more and more admirers around the world among children and adults. This is not surprising, because there are so many options for sweetness. Here are just a few reviews from those who had a chance to enjoy the magical taste of this sweet.

Turron is a great treat for children and adults

One of the simplest options for making turron at home is already in front of you. The alluring aroma of roasted almonds and citrus fruits is simply magical! And most importantly, you can create this miracle in your kitchen with your own hands. For those who are familiar with the confectionery art quite closely, this recipe will remind you of the cold (without heat treatment) method of making marzipan. However, you can also find such a delicacy on sale under the enticing name "turron".

You will need:

  • 250 g of peeled almonds, ground into fine crumbs;
  • 200 g icing sugar;
  • 50 g honey;
  • 0.5 teaspoon ground cinnamon;
  • zest of one lemon;
  • 1 egg white.

Cooking steps:

  1. Put the peeled almonds on a baking sheet lined with a piece of parchment and place them in an oven preheated to a temperature of 180-200 degrees. Dry the nuts for 15 minutes, being careful not to burn them. You can also prepare this ingredient by lightly frying it in a dry hot skillet.

    A fragrant delicacy with a magical taste on your table!

Starting to consider the following recipes, it is necessary to say a few more words about the varieties of turron. Despite the fact that the original version of the delicacy is precisely nougat, in the modern confectionery world there are turrons in the form of sweets, which are familiar to us under other names. For example, in France, turronom means praline with various additives. In shops you can see sweets "a la turron". And some restaurants serve a delicate dessert with whipped proteins, wine and other tasty ingredients, which has the same name.

With whole almonds

It is impossible to resist such a treat!

Another great recipe that will surely find its place in the culinary notebook of every hobbyist cook. Just a few ingredients and a little patience will allow you to enjoy the taste of Spanish sweetness from the comfort of your home. Turron turns out to be of medium density, but the more time it lies in the refrigerator, the more solid it will turn out.

Ingredients:

  • 250 g peeled and roasted almonds;
  • 200 g honey;
  • 100 g sugar;
  • 1 egg white.

Cooking steps:

  1. Line the rectangular form for the turron with a sheet of baking paper.
  2. Beat the cooled egg white until stable peaks form, set aside for a while.
  3. Place sugar and honey in a saucepan, stir, put on the stove and, stirring constantly, heat over low heat until the sugar is completely dissolved. You should get a homogeneous, rather thick mass.

  4. As soon as bubbles begin to appear on the surface of the syrup, indicating a boiling of the liquid, remove the pan from the heat. Gradually, without ceasing to stir the caramel, add the beaten egg white. Stir the mixture of ingredients until you get a smooth paste. Despite the fact that in many nougat recipes it is proposed to "brew" the beaten egg white by pouring hot caramel into it in a thin stream, in this case everything is done the other way around. The result practically does not change, but the delicacy is less airy.

You can check the temperature of the syrup with a special caramel thermometer. If there is no such house, you can determine the degree of readiness by eye. Once the syrup has boiled, scoop up some liquid with a clean spoon and drip into a bowl of ice water. If the syrup has hardened and you can roll a soft ball out of it, it's time to proceed with the further steps in preparing the turron.
