"Capercaillie's nest": a recipe for a spectacular salad
It is no coincidence that the housewives save the salad “Capercaillie's Nest” for special occasions. It is distinguished not only by its spectacular presentation and satiety, but also by a thoughtful combination of flavors. Crispy potatoes, spicy onions, tender meat … Few will remain indifferent.
"Capercaillie's nest": preparing step by step
The famous "Nest" sometimes includes the most unexpected ingredients, but for the classic version of the dish you will need:
- 400 g chicken fillet;
- 3-4 medium potatoes;
- 2 small or 1 large cucumber;
- 4 chicken eggs;
- 4 quail eggs;
- 100 g of hard cheese;
- 50-60 g of processed cheese;
- 1 onion;
- a bunch of dill;
- 8-9 Art. l. mayonnaise;
- 200 g of vegetable oil;
- Bay leaf;
- black peppercorns;
- salt.
Recipe step by step.
-
Pour chicken meat with cold water, add bay leaves, black peppercorns, salt and boil for about half an hour.
In addition to bay leaf and pepper, you can add a few sprigs of parsley to the pan.
-
Cut the finished chicken into smaller pieces - so that it is convenient to chew.
Cut the meat into small cubes
-
Boil the eggs and peel. Set the quail aside, and chop the chicken with a grater. You need both yolk and white.
You can take only chicken eggs, but with quail the salad looks more spectacular.
-
Peel the onion and cut into half rings.
To rid the onion of bitterness, pour boiling water over it and leave it there for a quarter of an hour.
-
Pass the peeled and washed potatoes through a special grater for Korean carrots, rinse and dry.
You can just cut the potatoes into strips, but this will no longer be the classic "Nest"
-
Pour the oil into a high-sided skillet (a wok is perfect for this), heat and dip the potato chips into it.
Convenient to fry potatoes in a metal sieve
-
Use a slotted spoon to remove the prepared straws from the skillet and place on a napkin. Season with salt.
Paper towels will absorb excess oil
-
Cut the cucumbers into thin cubes.
Cucumbers can be either fresh or salted or pickled - according to your taste
-
Grate both types of cheese separately.
Each type of cheese will be used to make different parts of the salad
-
Chop the greens.
You can use other herbs of your choice.
-
Combine all the ingredients in a bowl except potatoes, melted cheese, and quail eggs. Add a few tablespoons of mayonnaise, salt and stir.
The salad is almost ready, it remains to decorate it
-
Put the resulting mass on a wide, flat dish with a slide and crush the top with a spoon to make a small dent.
"Nest" looks great on a backing of fresh lettuce leaves - take note
-
Cover the salad with potato strips, leaving the center of the "nest" empty - you need to add chopped dill here.
Agree, it already looks like a nest
-
The final touch is to beautifully place the quail eggs on top of the dill.
That's all, the salad can be served to guests
-
Another decoration option: take boiled chicken eggs instead of quail eggs, cut them in half, remove the yolks, mash with 1-2 tablespoons of mayonnaise, a pinch of dill and cream cheese. Season with salt, pepper, sculpt small "testicles" and put them in the "nest".
Real and "fake" quail eggs look interesting side by side
There are many ways to prepare and serve this mouth-watering salad
Some people prefer to lay the ingredients of the salad on a dish in layers, smearing them with mayonnaise: onions - fillets - cucumbers, etc. But in my humble experience, such a salad turns out to be rather dry, so I prefer to immediately mix all the components of the "nest" in a bowl and only then spread them on the dish.
