- 1 cup freshly chopped dill
- 4 cloves of garlic;
- 1/2 lemon (juice and zest);
- 50 ml of refined vegetable oil;
- 0.5 tsp salt.

- 150 g dill;
- 600 g carrots;
- 400 g of onions;
- 10 cloves of garlic;
- 2 tbsp. l. vinegar;
- 100 ml of vegetable oil;
- 100 ml of water;
- salt to taste.

- Rinse and peel all vegetables and chop them. In this case, it is better to cut the onion into small cubes, and grate the carrots.
- Saute the onions until golden brown. Add carrots and cook until tender. Add dill, squeezed garlic to vegetables, salt.
- Pour vegetables with water, simmer for 15 minutes without a lid over medium heat. After pouring in the vinegar, bring to a boil again and turn off the stove. Transfer the finished gas station to cans and roll up.
Parsley and dill sauce
This recipe is a variation on the Argentinean chimichurri sauce traditionally made with lots of greens. The basis for us will be dill and parsley, and other spicy herbs will give depth to the taste, and you also need a little spiciness. So, you will need:

- 1 bunch of parsley;
- 1 small onion (or 4–5 green onion stalks);
- 2 cloves of garlic;
- 1 small chili (or 1 teaspoon chili powder)
- 1 sweet paprika pepper (or 1 teaspoon paprika powder);
- 1 tsp (no slide) salt;
- a few sprigs of fresh oregano (or 1 teaspoon dry);
- 2/3 cup olive oil
- 1/2 teaspoon of sugar;

You can chop food by hand with a knife, but if you use a blender, cooking will take much less time.

Wash and dry the greens thoroughly, chop and place in a bowl. Add minced garlic and finely chopped peeled peppers.

- Grate the zest from the lemon, squeeze the juice from the pulp into a bowl with prepared foods. Stir.
- Transfer the food from the bowl to a 1 quart jar with a lid, add salt, sugar and olive oil. Close the jar tightly and shake well for 2 minutes to smooth the mixture.
- To make the sauce in a blender, add all the ingredients without the oil to the bowl and beat for a minute on high speed. Then add oil and stir a little more.
Sour cream-dill dressing with garlic
This sauce is very easy to prepare and can be done a couple of minutes before serving the main course. True, it is not suitable for harvesting for the winter.
You will need:
- 200 g sour cream, 15–20% fat;
- 1 bunch of dill;
- 3 cloves of garlic;
- salt to taste.

Chop the dill finely. Add cilantro, parsley or basil to it if you like. Mix in a bowl with sour cream. Squeeze the garlic into it. You can take it more or less, depending on how much sharpness you want to achieve.

How to keep dill sauce for the winter
Almost any of these recipes are suitable both for consuming the sauce in the near future and for long-term storage. In the second case, the finished product must be preserved. Salt and vinegar are used as natural preservatives. But to ensure that the sauce does not spoil, you need to follow a few rules.
Preservation will help preserve the freshness of dill sauce for a long time.
- Jars with lids must be thoroughly washed, dried and sterilized.
- The prepared sauce should be put into jars while they are still hot, using an exceptionally dry, clean spoon.
- Use only fresh food without any signs of rotting for cooking.
