Step-by-step recipes for minced hedgehogs with rice
To prepare hedgehogs with rice, use meat (pork, beef or mixed), chicken or turkey mince. The dish can be cooked in a frying pan, in a cauldron or saucepan, oven, multicooker, microwave or steam.
In a frying pan in tomato sauce
Juicy tomatoes give the meatballs a rich flavor and delicate texture.
Ingredients:
- 400 g ground beef;
- 1/2 tbsp. long grain rice;
- 500 g of tomatoes in their own juice;
- 2 onions;
- 1 egg;
- 3 tbsp. l. sunflower oil;
- salt and black pepper.
Preparation:
-
Prepare food.
Ground beef can be substituted with mixed meat or poultry
-
Cut the onion into small cubes and fry in sunflower oil until golden brown.
Fry the onion until lightly golden, but do not let it burn
-
Place the onions in a strainer over a clean bowl. Do not pour out the drained oil, as you will need it later to fry the balls.
Leave onions in a sieve for 10-15 minutes
-
Combine the minced meat with rice, onions, an egg, half a teaspoon of salt and a pinch of black pepper.
For thorough kneading of minced meat, choose a large volume cookware
-
Knead the resulting mass thoroughly.
Mass for hedgehogs should be well mixed and plastic
-
By wetting your hands with cold water, shape the minced meat into balls about 7 cm in diameter.
The workpieces will not stick if you periodically wet your hands with cold water during sculpting
- Place the pieces on a cutting board and refrigerate for half an hour.
- Heat the oil in which the onions were fried in a frying pan.
-
Fry the balls on both sides until golden brown.
Fry meats over medium heat on both sides

-
Preheat the gravy, place the meat pieces in it and simmer for 20 minutes.
To ensure even heating and the fastest cooking possible, remember to cover the cookware with a lid.

In the oven with cheese
Of all the possible ways to prepare meals for my family, I prefer the oven. Dishes turn out to be somehow especially tasty, tender. Plus, while the food is baked in the oven, there is free time to do something else useful. The recipe for minced hedgehogs with rice was suggested to me by a friend, whose husband and son are ready to enjoy her wonderful creation at least every day. In the original, lean pork is used for minced meat. I often cook this dish from chicken or turkey meat.
Ingredients:
- 500 g minced pork;
- 200 g of rice;
- 2 carrots;
- 2 onion heads;
- 1 egg;
- 150 g mayonnaise;
- 200 g sour cream;
- 150 g of hard cheese;
- 1/2 tsp curry;
- salt and spices to taste.
Preparation:
- Boil rice until half cooked, cool.
-
Combine the minced meat, rice, minced carrots, chopped onions, egg, spices and salt to taste.
Grind vegetables in any convenient way: through a meat grinder, using a grater, blender or knife
- Knead the mass well, form balls with wet hands.
-
Place the pieces in a high-sided baking dish.
Choose a baking sheet with high sides or a deep refractory dish for cooking
-
Prepare the filling: Combine mayonnaise, sour cream, a pinch of salt and curry powder.
You can use heavy cream for filling.
-
Add 100–150 ml of water to the prepared mixture, stir.
Fill for hedgehogs should not be too liquid and not very thick
- Pour the filling into the hedgehog mold.
-
Sprinkle the coarsely grated hard cheese over the dish.
All types of hard cheese are suitable for sprinkling the dish.
- Cook hedgehogs in the oven at 180 degrees for 45-60 minutes.
-
When the rice is soft and the cheese is melted and golden brown on the food, remove the hedgehogs from the oven.
Melted cheese covers the dish with a delicious golden brown crust
-
Serve with a side dish of your choice.

Toddlers also love to feast on delicious meat balls, but it is best for children to steam them, without adding oil and frying the products that make up the dish. Both my daughters, one of whom is only one and a half years old, and the second is almost 11 years old, are happy to eat delicious round cheeks on both cheeks. The husband does not refuse such a dinner, who is always happy with the most healthy food.
Ingredients:
- 100 g long grain rice;
- 450 g lean pork;
- 30 g of dried loaf;
- 100 g of milk;
- 1 onion;
- 1 egg;
- 1/2 tsp salt;
- spices to taste;
- black peppercorns.
Preparation:
-
Rinse the rice in several waters.
Rice needs to be washed several times until the water is clear
-
Put the rice in a pot of boiling water, add a little salt and cook for 5 minutes.
Rice must remain firm, otherwise it will boil down and turn into porridge during further cooking.
-
Place the rice on a sieve and let the liquid drain.
To get rid of excess water, leave the rice in a sieve for at least 10 minutes.
-
Prepare food for minced meat.
Lean pork can be replaced with veal, chicken or turkey fillets
-
Soak a piece of loaf in warm milk.
Before adding to the minced meat, the loaf soaked in milk must be lightly squeezed by hand
- Scroll the pork and peeled onions through a meat grinder.
-
Combine the minced meat with egg, soaked loaf, salt and spices to taste.
You can add any spices and seasonings to the minced meat.
-
Mix all ingredients thoroughly until a plastic mass is obtained.
If the minced meat turns out to be too runny, you can add some bread crumbs or semolina
- Pour water into the multicooker, turn on the "Steam" mode for 40 minutes.
- Form hedgehogs: roll oblong blanks from minced meat and roll them in boiled rice so that one edge remains without grains.
-
Place the hedgehogs in a steaming bowl.
Position the workpieces so that they do not touch each other
-
Use the black peppercorns to make the eyes and noses for the hedgehogs.
Forming the eyes and nose, press the peppercorns into the minced meat
-
Place the steamer in the multicooker bowl, close the appliance and cook until the beep sounds.
