Beautiful and ruddy baked chicken will be a decoration of the New Year's table. Each housewife has her own favorite recipe for this dish. But you always want variety. We offer five recipes for making New Year's chicken.
Indian chicken with honey, walnuts and pineapple
The main thing in this recipe is the marinade, in which the chicken should lie for a day before baking.
Required:
- chicken - 1.5-2 kg;
- honey - 3 tbsp. l.;
- ground ginger - 1 tbsp. l. (or fresh - 3 cm of root);
- vegetable oil - 4 tbsp. l.;
- cognac - 2 tbsp. l.;
- brown sugar - 2 tbsp l.;
- canned pineapple pieces - 1 can;
- garlic - 2 cloves;
- chopped walnuts - 2 tbsp. l.;
- ground black pepper - 1/2 tsp;
- nutmeg - 1/2 tsp;
- salt - 2 tsp;
- lemon juice - 2 tbsp l.
Cook like this:
- Make the marinade first. To do this, mix two tablespoons of honey, one teaspoon of brown sugar, brandy, half of ginger (if using fresh, grate the root on a fine grater) and vegetable oil, lemon juice, pepper, two tablespoons of pineapple liquid, nutmeg.
- Wash the chicken, then pat dry with a paper towel (s).
- Rub the marinade generously on the inside and outside, wrap with cling film. Place on the bottom shelf of the refrigerator and let sit overnight.
- Prepare some liquid to grease the carcass during baking. To do this, pour the remaining liquid from the pineapples into a bowl, add the grated garlic, the remaining vegetable oil, brown sugar, honey, ginger. Stir until sugar dissolves.
- Toss the pineapple pieces with the walnuts separately.
- Remove the bird from the film, fill with a mixture of pineapple and nuts, sew up.
- Place it in a deep baking sheet (as you will be pouring plenty of liquid over it). Place a container of water at the bottom of the oven to keep the chicken from drying out. Preheat the oven to 200 ° С, place a baking sheet there, after half an hour reduce the temperature to 180 ° С.
- Bake for an hour and a half, depending on the size of the bird, sprinkling pineapple liquid often and abundantly. Turn the chicken over a couple of times so it is browned on all sides and does not burn. Cover it with foil 20 minutes before cooking.
It is better to serve such chicken with crumbly rice and fruits - citrus fruits, persimmons or grapes.
Chicken with oranges, honey and wine
Chicken turns out delicious if you add oranges, honey and wine to it.
Required:
- chicken - 1.5-2 kg;
- oranges - 5 pcs.;
- garlic - 1 head;
- honey - 2 tbsp. l.;
- red wine - ½ glass;
- black pepper - to taste;
- coriander (grains) - 1 tsp;
- soy sauce - 2 tbsp l.
Cook like this:
- Prepare the marinade - mix the juice of two oranges, wine and honey, add coriander seeds (honey should fully bloom).
- Wash and dry the bird carcass. Use a syringe to inject soy sauce into it. Rub it liberally with the marinade. Wrap in plastic and leave for half an hour.
- Cut one orange into slices, two into slices (including the peel).
- Peel the garlic. If the teeth are large, divide in half.
- Cover the bottom of the baking sheet with foil, spread the orange circles on it in one layer.
- Combine the orange wedges with the garlic and fill the poultry with them. No need to sew up. Put it on top of oranges, cover with foil.
- Preheat oven to 180 ° C. Place the baking sheet. Bake for an hour, then open the foil for another half hour.
Place the chicken on a dish, spoon the oranges out of it and place them over.
Chicken with apples, soy sauce and garlic
Everyone has done a chicken stuffed with apples at least once, so you won't surprise guests with such a dish. What if you swap them? We suggest cooking the other way around - apples stuffed with chicken.
Apples for this dish should be taken with dense pulp and preferably high.
Required:
- apples;
- chicken fillet - at the rate of 50 g per apple;
- butter;
- dill (optional);
- garlic - 3 cloves;
- soy sauce - 2 tbsp l.;
- mustard - 1 tsp;
- mtd - 1 tsp. (optional).
Cook like this:
- Mix the soy sauce, mustard and honey until smooth.
- Cut the fillet into very small cubes. Stir it with the marinade and leave for half an hour.
- During this time, prepare the apples (the hardest part - you have to do everything very carefully). The cores and part of the pulp should be removed from the apples so that the walls of one centimeter remain. There should be no cuts or punctures on the sides or bottom, so that juice does not flow out.
- Cut the removed apple pulp into small cubes, chop the dill, rub the garlic. Squeeze the marinated fillet and mix with the rest of the filling.
- Start apples. Line a baking sheet with baking parchment and place the apples on it.
- Put a small piece of butter on the filling of each apple, and brush the outside of the apples with it.
- Preheat the oven to 180 ° C. Place a baking sheet in it. Bake for 20-30 minutes.
Carefully place the apples on a dish so that they don't break.
Chicken with mushrooms, sour cream and garlic
Chicken and mushrooms are a good combination. Try stuffing it with fried mushrooms.
Required:
- chicken - 1.5-2 kg;
- champignons - 200 g;
- onion - 1 medium head;
- bell pepper - 2 pcs.;
- white wine - ½ tbsp.;
- sour cream - 2 tbsp. l.;
- butter - 2 tbsp. l.;
- vegetable oil;
- salt, black pepper - to taste;
- potatoes - one medium potato per serving.
Cook like this:
- Put the potatoes in their skins to boil. When cooked, remove from water - let it cool.
- Mix a spoonful of sour cream with salt and pepper.
- Wash the chicken, dry it and rub it with prepared sour cream.
- Cut the mushrooms into thin slices, the onion into half rings. Fry in vegetable oil for five minutes. While stirring, add a tablespoon of sour cream and simmer for another 10 minutes.
- Stuff the bird with mushrooms. Sew up the abdomen.
- Fry the carcass in a pan with vegetable oil on all sides until crispy.
- Cut the bell peppers into rings, put them in a deep baking sheet or rooster. Put the bird there with its back down, fill it with wine, add butter.
- Place in an oven preheated to 180 ° C and simmer for an hour and a half.
Place the chicken on a platter. Peel the jacket potatoes, cut them into quarters and arrange them around them. Remove the mushrooms from the abdomen, and the bell pepper from the liquid, arrange them over the potatoes. Strain the liquid remaining in the gosper and serve separately in the gravy boat.
Chicken with lemon, garlic and potatoes
This recipe is good because it is immediately prepared with a side dish.
Required:
- chicken - 1.5-2 kg;
- potatoes - 500 g;
- soy sauce - 50 ml;
- salt and black pepper to taste;
- garlic - 2 cloves;
- lemon juice - 1 tbsp l.;
- butter.

- Mix lemon juice with salt, pepper and grated garlic.
- Wash and dry the bird. Syringe the soy sauce into it, then rub the outside and inside with lemon juice.
- Peel and cut the potatoes into circles or slices.

- Bake in an oven preheated to 200 ° C for one hour. Remove the foil, reduce the heat to 180 ° C and hold the bird until golden brown for 20-30 minutes.
