Nobody eats semi-finished products in my family: we welcome only homemade dumplings, pastries and cutlets. Today I will share with you the recipes for juicy cutlets and at the same time tell you why I no longer fry them, but bake them in the oven.

About 3 years ago, I first tried to make cutlets in the oven and since then I have not returned to traditional frying. Everyone who tries my culinary masterpieces is delighted and asks for a recipe, so first I will explain why burgers in the oven are better than ordinary fried ones.

  1. Saving time. It takes me no more than 15 minutes to prepare a full-fledged dinner: to prepare the minced meat and cook the side dish. While the patties are simmering in the oven, I can check my child's homework, do housework, or take a bath.
  2. There is no soot and smell in the whole apartment. In our Khrushchev there is no door to the kitchen, so frying meat is accompanied by the spread of a persistent aroma, even if the windows are open and the pan is covered with a lid. There is no such problem with the oven.
  3. Baked patties are healthier than fried ones. I put them on a baking sheet on foil without adding oil, so they are hearty and healthy. Even my daughter, who is obsessed with proper nutrition, eats my cutlets with pleasure.
  4. The cutlets in the oven are tasty, juicy and evenly baked. When frying, you need to constantly monitor them, and sometimes you get a black crust on the outside and raw meat on the inside. There is no such problem with baked cutlets.

In general, I am with both hands for the oven and delicious homemade food.

Traditional cutlets

The most popular and favorite recipe is classic cutlets. I make the minced meat myself: I mix beef and pork in equal proportions, sometimes I add a little chicken meat.

I also add:

  • potatoes - 2 pieces;
  • mayonnaise - 2 teaspoons;
  • onion - 1 piece;
  • garlic - 2 cloves;
  • bread - 2-3 slices;
  • vegetable oil - 1 tablespoon;
  • salt and pepper to taste.

The amount of ingredients is calculated for 300 grams of minced meat.

Pre-grind the bread crumb, add mayonnaise, chopped garlic and mix well. I leave it for 10-15 minutes while I scroll the meat in a meat grinder. Next, I mix the meat with the bread mixture, add the potatoes grated on a coarse grater, chopped onions, then salt and pepper. I add vegetable oil immediately to the minced meat, but you can also pour it on a baking sheet.

Preheat the oven to 180 degrees, cover the baking sheet with foil, form small meat balls and put them on the baking sheet. Distance between cutlets - at least 1 cm. Cooking time - 30-40 minutes.

Buckwheat cutlets

This recipe helps me out when there is little time left before the guests arrive, and there is no meat at home. Very tasty and juicy cutlets that are loved by both children and adults. Many do not even realize that there is no meat in them.

Ingredients:

  • buckwheat - 1 glass;
  • white cabbage - 200 g;
  • chicken egg - 1 piece;
  • flour - 100 g;
  • vegetable oil - 1 tablespoon;
  • salt to taste.

Boil buckwheat and finely chopped cabbage separately. I throw it in a colander for 5-7 minutes so that all the water is glass. Then I mix cabbage, buckwheat, add an egg, about 3/4 flour, salt and knead the minced meat well with my hands.

I form cutlets, roll in flour and put on a baking sheet. Then I pour them with oil and send them to an oven preheated to 180 degrees for 15 minutes. By the way, these cutlets can be eaten in the post.

Chicken cutlets

A budget option for a meat dish, low in calories and very tasty. These homemade cutlets are most of all eaten with rice, bulgur or durum wheat spaghetti.

Ingredients:

  • minced chicken fillet - 400 g;
  • cream - 50 ml;
  • onion - 1 piece;
  • bread - 2-3 pieces;
  • soy sauce - 3 tablespoons;
  • butter - 50 g;
  • vegetable oil - 1 tablespoon;
  • salt to taste.

I experiment with these ingredients all the time, especially with oils and the order in which soy sauce is added. One thing remains unchanged: I soak bread without crumb in cream for 5-10 minutes, mix the minced meat with chopped onion and salt. Now you need to decide on the oils: one of them is added to the minced meat, with the other we will grease the foil on the baking sheet.

Preheat the oven to 180 degrees, line the baking sheet with foil and grease with oil. I usually add butter to the minced meat, and use vegetable oil to grease the baking sheet. After mixing the bread with minced meat, I form cutlets, put them on a sheet and put them in the oven.

After about 10 minutes, when a crust forms, I take it out of the oven and sprinkle the cutlets with soy sauce. After that, I reduce the temperature to 150 degrees and put the baking sheet in the oven for another 8-10 minutes.

The most important thing in this recipe is not to overdo it with salt, because soy sauce also adds a saltiness to the dish. For those who do not like too salty food, I recommend not to salt the minced meat at all.

Potato cutlets

One of my family's favorite recipes. Delicious, hearty potato cutlets with cheese go very well with vegetable stews and kebabs. This dish requires only 4 ingredients:

  • potatoes - 500 g;
  • hard cheese - 100 g;
  • chicken egg - 2 pieces;
  • flour - 100 g.

I rub the raw potatoes on a coarse grater and get rid of excess liquid: put them in cheesecloth and squeeze. Then I mix with grated cheese, add eggs and 2/3 flour. I form small balls, roll them in the remaining flour and spread on a baking sheet. In a preheated oven, they cook for only 15-20 minutes.

Mushroom cutlets

The best summer meal, especially for those who often go mushroom picking.

Ingredients:

  • boiled mushrooms - 500 g;
  • onion - 1 piece;
  • chicken egg - 1 piece;
  • bread crumbs - 2 tablespoons;
  • black pepper to taste.

I wash the mushrooms well and boil them in salted water, then pass them through a meat grinder along with the onion. Be sure to drain the excess liquid, break the egg and add a little black pepper and stir well. It remains to roll the cutlets in bread crumbs and send to the oven for 15-20 minutes.

In general, I advise you to experiment with ingredients and create your own recipes that you will definitely like at home.
