If you are a fan of ruddy pancakes and at the same time want to add variety to the menu and add new notes to familiar dishes, be sure to pay attention to the recipe for your favorite dish with the addition of juicy carrots. Thanks to this vegetable, the already appetizing rounds acquire a bright color and a renewed taste.
Step-by-step recipe for carrot pancakes
The idea of making pancakes with various additional ingredients in the dough came into my head many years ago. The first time it happened was when I couldn't feed my eldest daughter with cottage cheese. The experience of mixing a healthy dairy product into the pancake dough was successful, so later I began to experiment with other additives. When the turn came to carrots, the result exceeded all my expectations. The pancakes turned out to be bright orange, which immediately attracted the child's attention, and the daughter liked the taste of the treat so much that she began to ask to cook it every weekend.
Ingredients:
- 500 ml of milk;
- 200 g of peeled carrots;
- 160 g flour;
- 1 egg;
- 3-4 st. l. refined sunflower oil + for frying;
- 1 tbsp. l. granulated sugar;
- 1/4 tsp salt;
- 1 bag of vanilla sugar.
Preparation:

Grate the carrots on a fine grater.

Combine milk, granulated sugar, salt, vanilla sugar and an egg.

Pour the pre-sifted flour into a bowl. Mix everything well again.

- Place the lid on the bowl and let the dough sit for 15 minutes.
- Preheat a frying pan, brush with a little oil.

Fry the pancakes on both sides until browned
- As soon as the dough on top of the piece grasps and stops being liquid, gently pry the pancake and turn it over with a spatula to the other side. Broil for 1 minute, until browned.
